Simple Black Bean Soup

Ingredients

  • 2 cups (473 ml) black beans, cooked with cooking liquid
  • 1 cup chopped red bell pepper (150 g.)
  • 1 cup chopped white onion (150 g.)
  • 3 cups chicken or vegetable broth, 750 ml
  • 3 cloves garlic, minced
  • 1 teaspoon of Cumin
  • Salt to taste
  • Pepper to taste
  • 2 teaspoons (10 ml) olive oil

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 10 minutes. Add the garlic and cook for 2 minutes more. Stir in the red bell pepper and cook for 4 minutes more.
  • Add the black beans, cooking liquid, broth, cumin, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 40 minutes, or until the flavors have melded. Serve hot.
