2 cups (473 ml) black beans, cooked with cooking liquid
1 cup chopped red bell pepper (150 g.)
1 cup chopped white onion (150 g.)
3 cups chicken or vegetable broth, 750 ml
3 cloves garlic, minced
1 teaspoon of Cumin
Salt to taste
Pepper to taste
2 teaspoons (10 ml) olive oil
Instructions
Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 10 minutes. Add the garlic and cook for 2 minutes more. Stir in the red bell pepper and cook for 4 minutes more.
Add the black beans, cooking liquid, broth, cumin, salt, and pepper.
