weight watchers shrimp alfredo with spinach

Ingredients

  • 6 oz whole wheat pasta
  • 2 cups fresh spinach
  • 1/2 lb medium shrimp peeled and deveined
  • 1 tbsp seasoning blend
  • 1-2 fresh sage leaves
  • Cooking spray
  • 3 cloves garlic minced
  • 1/4 cup diced shallots
  • 2 cups low-fat milk
  • 1/4 cup  Parmesan cheese optional
  • 1 tbsp cornstarch

Instructions

  • Cook your pasta noodles Al dente then set aside
  • Heat your skillet to medium and spray with cooking spray and sauté the garlic and shallots for 2 minutes
  • Season the shrimp and add them into the skillet
  • Cook the shrimp for 2-3 minutes then turn them over before adding the spinach and sage in and cooking another 2-3 minutes
  • Remove the shrimp and spinach and deglaze the pan with the milk
  • Reduce the heat to medium/low and whisk in the cornstarch and Parmesan
  • Simmer for 5 minutes and remove heat
  • Add the noodles, shrimp, and spinach back into the sauce
  • Serve!
