Pumpkin spice donuts with brown sugar buttercream icing

Ingredients

  • 2 Tbsp egg whites I use from the carton
  • 1/4 cup pumpkin pure canned pumpkin
  • 1/3 cup milk I used skim
  • 1 tsp vanilla
  • 1/2 cup + 2 Tbsp flour
  • 1 tsp baking powder
  • 1 Tbsp brown sugar
  • 1.5 tsp pumpkin spice or 1/2 tsp each of cinnamon, all spice and nutmeg
  • FOR THE BUTTERCREAM ICING
  • 1/2 Tbsp butter melted
  • 1 Tbsp brown sugar
  • 1/2 Tbsp milk
  • 2 Tbsp icing sugar confectionery sugar

Instructions

  • Preheat the oven to 350F, and spray a 6 hole donut pan with some cooking spray.
  • In a bowl, whisk together the egg whites and 1 tablespoon of brown sugar. Add in the pumpkin puree, ⅓ cup milk, and vanilla and mix well.
  • Stir in the all purpose flour, baking powder, and pumpkin spice.
  • Divide batter into the 6 donut hole pan.
  • Bake in the oven for 14-16 min.
  • Meanwhile, you can make the frosting! Stir melted butter, and 1 tablespoon brown sugar together in a small bowl. Add ½ tablespoon milk and the icing sugar and stir it well. Store it in the fridge until the donuts are baked. Top donuts with the icing. Enjoy!
