- 12 pieces low-calorie bread I used weight watchers whole wheat bread 12 pieces=18SP
- 6 eggs
- 1 1/3 cup milk I used 1%
- 1 1/2 cup fresh berries I used raspberries, strawberries and blueberries
- 1 Tbsp honey
- 1 tsp cinnamon
- 1.5 tsp vanilla
- 2 Tbsp sugar
- 2.5 Tbsp flour
- 3/4 Tbsp melted light butter I use Gay Lea
Cut the 12 pieces of bread into small 1-inch pieces, and spray a 9-inch dish with nonstick cooking spray. Place half of the bread on the bottom.
In a bowl, or a large measuring cup, whisk together the eggs, milk, honey, vanilla extract, and cinnamon.
Place half of the fresh berries on top of the bread in the casserole dish, then top with remaining cut bread.
Pour the egg mixture over the top, making sure to cover all areas. Push down on bread a bit so it all gets soaked in. Top with remaining berries, cover with foil, and refrigerate for at least one hour.
In a small bowl mix the sugar and flour together, then stir in the melted butter until a crumble forms. Sprinkle this crumble on top.
Preheat the oven to 350F, and bake covered with foil for 30 minutes. Remove the foil and continue baking for 25 minutes.
Serve warm and enjoy!
