Pumpkin spice apple oatmeal muffins

  • 2 eggs
  • 2 Tbsp brown sugar
  • 1/2 cup canned pure pumpkin
  • 3/4 cup 1% milk
  • 1 tsp vanilla
  • 2.5 cups oats
  • 1 tsp baking powder
  • 1.5 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 3/4 cup diced apple


  • Preheat oven to 350F and spray a 12 hole muffin tin with some non stick spary.
  • In a bowl whisk together your eggs and brown sugar. Stir in milk, vanilla and pumpkin.
  • Mix in your oats, baking powder and spices, fold in your diced apple (peel apple and cut into very small pieces)
  • Divide batter into your 12 muffin cups and bake for 20 minutes.
  • Remove from oven and allow to cool for 5 minutes.
  • Store in fridge or freeze.
