Preheat oven to 350F, spray 9x13 casserole dish with some non stick spray.
Roll out the pizza dough so it is farily thin without breaking apart.
Cover the dough with the deli chicken then layer the chicken with the cheese *Note- I went to my local deli and had them slice me some light provole cheese as thin as they could, ask at your deli, and you can use a different cheese if you can't find a light provolone, my cheese was 5SP for the 3oz
Roll the pizza dough up so you have one long roll, then cut into 16 equal rolls, best way to do this is cut in half, then cut those halves in half and repeat till you have 16 pieces, place rolls in baking dish.
In a small bowl mix together the melted butter, brown sugar and dijon mustard. Using a pastry brush, brush each roll with the mixture.
Bake in the oven for approximetly 35 minutes or until a nice golden brown on top.
Serve warm, you could easily prep these for a party and place the roll in the fridge then cut and bake them at the time they are needed.
