coconut banana muffins

- 2 eggs
- 3 Tbsp brown sugar
- 2 ripe mashed bananas
- 1/3 cup unsweetned applesauce
- 1 tsp vanilla
- 1 cup flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 3 Tbsp unsweetened coconut flakes
- 4 Tbsp mini chocolate chips
Preheat the oven to 350F and spray a regular size 12 cup muffin tin with some nonstick cooking spray.
In a bowl, whisk the eggs and brown sugar together. Add in the mashed banana, applesauce, and vanilla extract.
Stir in the all purpose flour, cocoa powder, and baking powder.
Fold in 2.5 Tbsp of chocolate chips (leaving the remaining 1.5 Tbsp for the topping)
The batter will be on the thicker side and that is ok. Fill the muffin cups equally with the batter.
Sprinkle the coconut on top of the batter and then the remaining chocolate chips
Bake in the oven for 22 minutes or until baked right through. Let them cool then remove from the baking tin. Enjoy!
