Margarita Grilled Chicken

Margarita Grilled Chicken is my favorites, thanks to its citrus marinade. It is served with black beans and Mexican rice, adding an authentic touch to the dish.

Ingredients

  • 2 boneless, skinless chicken breasts (approximately 150g each)
  • 1 fl oz white tequila, 30 ml
  • 1 teaspoon garlic powder
  • ½ teaspoon of Stevia powder, 2 g.
  • ½ teaspoon freshly ground black pepper
  • Zest of 1 lemon
  • 2 tablespoons lime juice
  • Salt to taste
  • Optional Pico de Gallo Recipe
  • 2 ripe tomatoes, diced
  • ½ red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced
  • 2 tablespoons of corn
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  • In a bowl, combine the white tequila, garlic powder, black pepper, stevia powder, lemon zest, lime juice. Stir well to create the marinade.
  • Place the chicken breasts in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, making sure it is evenly coated. Allow the chicken to marinate for at least 30 minutes, or refrigerate for up to 2 hours for maximum flavor.
  • Preheat the grill to medium-high heat.
  • Remove the chicken from the marinade, allowing any excess marinade to drip off. Discard the remaining marinade.
  • Place the chicken on the preheated grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Cooking time may vary depending on the thickness of the chicken breasts.
  • Once cooked, remove the chicken from the grill and let it rest for a few minutes.
  • Serve the Margarita Grilled Chicken with optional accompaniments: Pico de Gallo, Mexican cauliflower rice, and black beans.

  • In a bowl, combine the diced tomatoes, red onion, jalapeño pepper, corn, and fresh cilantro.
  • Squeeze the lime juice over the mixture and season with salt and pepper.
  • Stir well to combine all the ingredients. Adjust seasoning to taste.
  • Allow the Pico de Gallo to sit for at least 15 minutes before serving to let the flavors meld together.
