Chicken Caesar Pasta Salad

An easy, rich, and delicious Weight Watchers salad recipe.

Ingredients

For the Salad:

  • 1 lb boneless chicken breast cubed (450 g)
  • 1 tsp olive oil 5 ml / 4.5 g
  • ½ tsp salt 3 g
  • ½ tsp black pepper 2 g
  • 4 cups mixed lettuce leaves chopped (120 g)
  • 1 cup cooked fusilli pasta 100 g
  • ¼ cup Parmesan cheese shavings 20 g
  • ½ cup croutons optional, 30 g

For the Dressing:

  • ½ cup plain Greek yogurt 120 g
  • 1 tbsp yellow mustard 15 g
  • 1 tbsp red wine vinegar 15 ml
  • 1 tsp anchovy paste 5 g
  • 2 garlic cloves minced (6 g)
  • ¼ tsp salt 1.5 g
  • ¼ tsp black pepper 1 g

Instructions

  • Season cubed chicken breast with salt and pepper.
  • Heat olive oil in a skillet over medium heat, add the chicken, and cook for 6–8 minutes, stirring occasionally, until golden and cooked through (internal temp 165°F / 74°C). Let cool completely.
  • Prepare the dressing by combining Greek yogurt, yellow mustard, red wine vinegar, anchovy paste, minced garlic, salt, and pepper in a bowl. Whisk until smooth, then set aside.
  • In a large bowl, toss together chopped lettuce, cooked fusilli pasta, and cooled chicken. Drizzle the prepared dressing over the mixture and gently toss to coat everything evenly.
  • Top the salad with Parmesan shavings and optional croutons. Serve immediately to maintain crispness.
