Chicken Caesar Pasta Salad

For the Salad:
- 1 lb boneless chicken breast cubed (450 g)
- 1 tsp olive oil 5 ml / 4.5 g
- ½ tsp salt 3 g
- ½ tsp black pepper 2 g
- 4 cups mixed lettuce leaves chopped (120 g)
- 1 cup cooked fusilli pasta 100 g
- ¼ cup Parmesan cheese shavings 20 g
- ½ cup croutons optional, 30 g
For the Dressing:
- ½ cup plain Greek yogurt 120 g
- 1 tbsp yellow mustard 15 g
- 1 tbsp red wine vinegar 15 ml
- 1 tsp anchovy paste 5 g
- 2 garlic cloves minced (6 g)
- ¼ tsp salt 1.5 g
- ¼ tsp black pepper 1 g
Season cubed chicken breast with salt and pepper.
Heat olive oil in a skillet over medium heat, add the chicken, and cook for 6–8 minutes, stirring occasionally, until golden and cooked through (internal temp 165°F / 74°C). Let cool completely.
Prepare the dressing by combining Greek yogurt, yellow mustard, red wine vinegar, anchovy paste, minced garlic, salt, and pepper in a bowl. Whisk until smooth, then set aside.
In a large bowl, toss together chopped lettuce, cooked fusilli pasta, and cooled chicken. Drizzle the prepared dressing over the mixture and gently toss to coat everything evenly.
Top the salad with Parmesan shavings and optional croutons. Serve immediately to maintain crispness.
