Preheat your oven to 200°F (93°C).
Line two baking sheets with parchment paper or silicone baking mats.
Slice the Apples:
Wash and dry the apples thoroughly.
Using a sharp knife or a mandoline slicer, slice the apples thinly, about 1/8 inch thick. Remove the seeds and cores.
Season the Slices:
Place the apple slices in a large bowl.
Sprinkle the cinnamon over the slices, tossing gently to ensure even coating.
Squeeze the lemon juice over the seasoned slices and toss again to coat. The lemon juice helps prevent the apples from browning during baking.
Arrange on Baking Sheets:
Arrange the seasoned apple slices in a single layer on the prepared baking sheets, ensuring they are not touching or overlapping.
Bake:
Place the baking sheets in the preheated oven.
Bake for 1.5 to 2 hours, flipping the apple slices halfway through the baking time to ensure even cooking.
Keep an eye on the chips towards the end of the baking time to prevent burning. The chips should be crisp and lightly golden brown when done.
Cool and Serve:
Once baked, remove the baking sheets from the oven and allow the apple chips to cool completely on the baking sheets.
As they cool, the apple chips will continue to crisp up.
Serve the baked apple chips immediately or store them in an airtight container for up to one week.
