Weight Watchers Strawberry Pie

A light and fruity strawberry pie with Jell-O and a homemade crust.

Ingredients

For The Crust:

  • 1 ¼ cup all-purpose flour
  • ½ tsp baking powder
  • 2-4 tbsp cold water
  • 3 tbsp  I Can’t Believe It’s Not Butter (Light) melted
  • 1 tbsp low-calorie sweetener or sugar (I used monk fruit with erythritol. If using sweetener, it must be a 1:1 ratio product)

For The Filling:

  • 1 16 oz package fresh strawberries with the ends cut off, sliced or quartered
  • 6 tbsp low-calorie sweetener or sugar (I used monk fruit with erythritol. If using sweetener, it must be a 1:1 ratio product)
  • 1 package zero sugar strawberry Jell-o
  • 1 ¼ cup water
  • 3 tbsp cornstarch

Instructions

Bake The Crust:

  • Preheat the oven to 400°F.
  • Add the dry ingredients in a bowl and mix to disperse the baking powder and sweetener.
  • Add the cold water and melted butter, forming a dough with your hands. (Start with 2 tablespoons of water and slowly add more until the mixture is no longer crumbly).
  • Form dough into a disc, wrap in plastic, and refrigerate for 30 minutes.
  • Roll out the dough between plastic wrap pieces and then transfer it to a greased 9-inch pie tin.
  • The dough will fit the pan exactly; you might have to work it with your fingers. It will feel thin, but the baking powder helps it puff up a bit.
  • Bake the crust for 25 minutes with pie weights (line the crust with foil or parchment and fill with dry rice or beans).
  • Remove the pie weights and bake the crust for 10 to 15 minutes longer or until it is thoroughly baked and golden brown.

Make The Filling:

  • Bring the water and cornstarch to a simmer, allowing it to simmer for one to two minutes.
  • Take the mixture off the heat. Add the preferred sweetener and jell-o, mixing to dissolve.
  • Allow the mixture to thicken for 5 to 10 minutes, then add the strawberries so the warmth can slightly soften them.
  • Transfer the filling to the pie crust and allow it to set in the refrigerator for four hours minimum before serving.
