Orange Glazed Pork Loin

Ingredients

  • 1 Pork Loin (approximately 2 pounds)
  • 1 cup Orange Juice (240 ml)
  • 3 cloves Garlic, minced
  • Salt, to taste
  • 3 sprigs of Rosemary
  • 1 teaspoon Oregano
  • 1 teaspoon Thyme
  • Black Pepper, to taste
  • 1 packet Stevia
  • 1 tablespoon grated ginger (optional)
  • For Glaze: 1/2 cup Orange Juice (120 ml), cooking juices, 1 tablespoon Cornstarch

Instructions

  • Prepare the Pork: Pat the pork loin dry with paper towels. Rub the pork with minced garlic, salt, oregano, thyme, black pepper, ginger, and Stevia. Ensure it's evenly coated.
  • Marination: Place the pork in a ziplock bag or a sealed container. Pour 1 cup of orange juice over the pork and add rosemary sprigs. Seal the bag or container and marinate in the refrigerator overnight.
  • Instant Pot Cooking: Remove the pork from the refrigerator and let it come to room temperature. Set your Instant Pot to the "Pressure Cook" function. Pour the marinade over the pork and add one cup of water. Cook on "High Pressure" for 25 minutes. Allow for a natural release for 10 minutes.
  • Glazing and Browning: Preheat your oven's grill function. Transfer the cooked pork to a baking sheet. In a small saucepan, combine 1/2 cup of orange juice with cooking juices. Mix in 1 tablespoon of cornstarch and simmer until the glaze thickens. Brush the pork with the glaze and grill for about 10 minutes or until the top is caramelized.
  • Serve: Let the pork rest for 10 minutes before slicing. Drizzle the remaining glaze over the sliced pork. Garnish with fresh orange slices.
