Instructions
Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a loaf pan with olive oil.
Sauté Veggies: In a skillet over medium heat, sauté the chopped onion, garlic, bell pepper, grated carrot, and zucchini until they're soft and fragrant. This step enhances the flavor and texture of your meatloaf.
Mix Ingredients: In a large mixing bowl, combine the ground turkey, breadcrumbs, sautéed vegetables, egg, ketchup, Worcestershire sauce, dried thyme, dried oregano, salt, and pepper. Mix everything together until well combined.
Shape the Meatloaf: Transfer the meat mixture into the greased loaf pan and shape it into a loaf shape. You can also make individual meatloaf muffins if you prefer.
Bake: Place the meatloaf in the preheated oven and bake for approximately 45-55 minutes, or until the internal temperature reaches 165°F (74°C). The top should be nicely browned.
Rest and Serve: Once done, remove the meatloaf from the oven and let it rest for a few minutes before slicing. This allows the juices to redistribute, keeping the meatloaf moist and flavorful.
