Servings: 6 slices of Cloud Bread
- 3 eggs
- 2 tbsp cream cheese, low fat
- ½ tsp baking powder
Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
Separate the egg yolks from the egg whites. Place the egg whites in a clean mixing bowl and set aside.
In a separate bowl, combine the egg yolks, cream cheese, and baking powder. Mix well until smooth and no lumps of cream cheese remain.
Using an electric mixer or whisk, beat the egg whites until stiff peaks form. This may take a few minutes.
Gently fold the egg yolk mixture into the beaten egg whites. Make sure to mix it gently to avoid deflating the egg whites.
Spoon the mixture onto the prepared baking sheet, forming small rounds or desired shapes.
Bake in the preheated oven for about 25-30 minutes or until the Cloud Bread is golden brown and firm to the touch.
Once done, remove from the oven and let the Cloud Bread cool on a wire rack.
Enjoy your homemade Cloud Bread as a low-carb bread alternative or use it as a base for sandwiches or other creative dishes.
Note: Cloud Bread is best enjoyed fresh, but you can store any leftovers in an airtight container in the refrigerator for a day or two.
