Vegan Banana Pudding

Ingredients

  • 3/4 cup cashews soaked overnight
  • 3 bananas
  • 1/2 vanilla bean
  • 2 tbsp agave syrup optional
  • 1 cup fresh dates pitted
  • 1/2 cup walnuts
  • 1/4 tsp ground cinnamon to taste
  • freshly grated nutmeg optional
  • 1/2 cup coconut whipped cream

Instructions

  • To make the pudding: In your blender or food processor, mix the cashews, 2 bananas, and vanilla until creamy, smooth, and uniform. Add agave syrup, if using, and process for 10 seconds more; reserve. 
  • To make the cookie dough: process dates, walnuts, cinnamon, and grated nutmeg, if using. Process until the mixture forms a dough.
  • Now, it’s time to assemble the dessert. Spoon a layer of the pudding into a dessert glass.
  • Add a layer of coconut cream, and then, the raw cookie dough layer. Add sliced banana. Repeat the layering process until you have used all of the ingredients, ending with a layer of coconut whipped cream on top.

  • Makes 4 servings 
  • 14 ww points per serving (can reduce points significantly by cutting coconut whipped cream)
