To make the pudding: In your blender or food processor, mix the cashews, 2 bananas, and vanilla until creamy, smooth, and uniform. Add agave syrup, if using, and process for 10 seconds more; reserve.
To make the cookie dough: process dates, walnuts, cinnamon, and grated nutmeg, if using. Process until the mixture forms a dough.
Now, it’s time to assemble the dessert. Spoon a layer of the pudding into a dessert glass.
Add a layer of coconut cream, and then, the raw cookie dough layer. Add sliced banana. Repeat the layering process until you have used all of the ingredients, ending with a layer of coconut whipped cream on top.
