In a large mixing bowl, whisk together the vital wheat gluten, nutritional yeast, garlic powder, paprika, black pepper, and poultry seasoning mix.
Add the broth and tahini to the dry mixture and stir with a rubber spatula until a dough ball forms.
After that, knead the dough with your hands. (If the dough seems too dry, add more vegetable broth, 1 tablespoon at a time).
Form the dough into nugget shapes (about 2 inches).
Bring a large pot of water to a boil (I added about 5 cups of water). Add the seitan wings and reduce the heat to medium. Let them cook for 40 to 45 minutes.
In the meantime, simmer all the buffalo sauce ingredients in a saucepan over medium heat. Stir until everything is well combined, and remove from the heat.
Once the seitan wings are cooked, place them on paper towels to remove excess water. Drizzle 1 tsp of olive oil over seitan wings and place them in the Air Fryer cooking basket.
Air fry the prepared seitan wings for about 10 minutes, until golden color. Pour hot Vegan Buffalo Sauce over the seitan wings to coat them on all sides. Serve and enjoy!
