Ingredients

  • 1.5 cup oats I use Quaker quick oats
  • 1 cup flour
  • ¼ cup ground flax seed
  • 1 tablespoon brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1 mashed banana
  • 1 egg
  • cup unsweetened apple sauce
  • 2 tablespoon milk I used 1%
  • 1 teaspoon vanilla
  • 1 cup blueberries I used frozen but fresh would work too

Instructions

  • Preheat the oven to 350F, and spray a large cookie sheet with nonstick cooking spray.
  • In a bowl, mix all of the dry ingredients together.
  • In a separate bowl, whisk the egg, milk, vanilla extract, unsweetened apple sauce, and mashed banana.
  • Add the wet ingredients to the dry and mix well. Slowly fold in the blueberries. Bake in the oven for approx 14 minutes. Let them cool and enjoy!
