Pizza Muffins

Ingredients

  • 3/4 cup flour
  • 1 tsp baking powder
  • 1/4 tsp garlic salt'
  • 1 tsp italian seasoning
  • 3/4 cup milk I used 1%
  • 1 egg
  • 1 Tbsp finely grated parmesan cheese
  • 1/3 cup reduced fat shredded mozzarella
  • 1/4 cup shredded asiago cheese
  • 3 slices cooked low point bacon Oscar Mayer center cut
  • 20 small slices pepperoni 56g

Instructions

  • Preheat the oven to 375F and spray a mini muffin tin with nonstick cooking spray.
  • In a small bowl, whisk together the egg and milk. Then in a separate bowl mix the flour, baking powder, garlic, and Italian seasoning together. Add the egg and milk mixture to the dry ingredients and mix well.
  • Stir in all of the cheeses.
  • Cut the pepperoni into small pieces and crumble the cooked bacon slices. Mix them both into the batter.
  • Divide the batter over the 24 mini muffin tin, and sprinkle with more Italian seasoning.
  • Bake in the oven for 20 minutes.
  • Carefully remove from the tin using a knife around the edges. Serve warm with some marinara sauce or pizza sauce for dipping.
