Blueberry lemon waffles

- 1 egg
- 1/4 cup unsweetened apple sauce
- 3/4 cup 1% milk
- 2 Tbsp fresh squeezed lemon juice
- 1 tsp vanilla
- 1 Tbsp sugar
- 1 tsp lemon zest
- 2 tsp baking powder
- 1 cup flour
- 3/4 cup frozen blueberries
Pre-heat the waffle maker.
In a bowl, or a 4-cup measuring cup (for easy pour of the waffle later), whisk the egg for about 3-4 minutes until it’s frothy.
Stir in the apple sauce, milk, vanilla extract, and lemon juice.
Mix well, then add the all purpose flour, baking powder, and lemon zest. Gently fold in the blueberries.
Spray the waffle maker with nonstick cooking spray.
Pour ⅓ of the batter into the waffle maker and cook for about 7-9 minutes until the light indicator goes on.
Serve warm and enjoy!
