Prosciutto mozzarella rolls

Ingredients

  • 3- 6 oz boneless skinless chicken breast cut open in two (If your following freestyle you do not need to worry if they weigh more than the 6oz)
  • 2 oz prosciutto
  • 3 oz mozzarella cheese
  • 1/4 cup diced red pepper
  • 1/4 cup diced red onion
  • 1 egg
  • Juice of half a lemon
  • 1/2 cup breadcrumbs

Instructions

  • Sautee the diced peppers and onions in a frying pan with a little cooking spray for 5 minutes.
  • Preheat the oven to 400F, and spray a baking dish with some non-stick cooking spray.
  • Mix the egg and lemon into a small dish. Spread the breadcrumbs out onto a flat plate.
  • Cut the 3 chicken breasts open so you have 2 (3 oz pieces).
  • Divide the 2 oz of prosciutto into 6 portions, approx 0.3oz in each roll.
  • Place the prosciutto on top of the chicken, then top with 0.5 oz of mozzarella, and add a spoonful of the pepper and onion mix. I also added a dash of pepper. Roll the chicken up, and use toothpicks to hold it in place if you need to.
  • Dip the rolled chicken into the egg mix and then roll it in the breadcrumbs. Place it on the baking dish, and repeat with the remaining chicken.
  • Once all of the chicken is rolled and in the dish, spray the tops with a little cooking spray, and bake in the oven for 25 minutes.
  • Serve warm, and enjoy!
