Chocolate Chip Banana Bread

- 2 eggs
- 1/4 cup brown sugar
- 3 medium mashed bananas
- 1/3 cup unsweetened applesauce
- 1 tsp vanilla
- 1 3/4 cup flour
- 1 tsp baking powder
- 60 g Lily's no sugar added dark chocolate chips about 1/3 cup
Preheat the oven to 350F and spray a regular sized loaf pan with some cooking spray.
In a bowl, whisk together the eggs and brown sugar. You’ll get a better texture if you use a hand mixer, and whip the eggs and sugar until they are light and fluffy.
Add in mashed banana, applesauce, and vanilla, and mix well.
Mix the chocolate chips with the flour and baking powder. Then gently fold it into the wet ingredients. Do not overmix!
Bake in the oven for approximately 45 minutes or until baked right through. If it’s getting very brown on the top at 45 minutes, but it’s still jiggly in the middle, turn the oven off, and let the loaf sit in it for another 5-10 minutes.
Let it cool, then cut it into 10 slices. Enjoy!
