- 1 box Jiffy Corn Muffin Mix
- 1 can (15 oz) creamed corn
- 1 can (15 oz) whole kernel corn, drained
- 1 cup non-fat Greek yogurt
- 1/4 cup unsweetened applesauce
- 1/4 cup diced green onions
- 1/2 cup shredded low-fat cheddar cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 eggs
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine Jiffy Corn Muffin Mix, creamed corn, whole kernel corn, Greek yogurt, eggs, applesauce, green onions, shredded cheddar cheese, garlic powder, salt, and pepper.
Mix until well combined.
Transfer the mixture to a greased baking dish.
Bake for 25-30 minutes or until the casserole is golden brown and set in the center.
Allow it to cool for a few minutes before serving.
