Ingredients
2 cups (180g) Grated Apples (about 2 medium apples)
1 cup (80g) Oat Flour
1 cup (120g) All-Purpose Wheat Flour
2 teaspoons Baking Powder
1 Egg
½ cup water
1 tablespoon Apple Cider Vinegar
1 tablespoon light Butter
Stevia (or your preferred sweetener) to taste
Instructions
Preheat your oven to 350°F (180°C) and grease a donut baking pan. Ensure it's well greased to prevent sticking.
In a mixing bowl, mix the oat flour, all-purpose wheat flour, and baking powder.
In a separate bowl, combine the grated apples, egg, water, apple cider vinegar, and melted butter. Mix well. Adjust the sweetness to your liking by adding Stevia or your preferred sweetener.
Gradually add the dry mixture to the wet mixture, stirring until you have a smooth batter. Be careful not to overmix; just combine until the ingredients are incorporated.
Spoon the batter into the greased donut baking pan, filling each donut mold about two-thirds full.
Place the pan in the preheated oven and bake for 15-18 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
Allow the baked apple donuts to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely. If desired, you can top the cooled donuts with a light dusting of cinnamon, a drizzle of honey, or a dollop of Greek yogurt for added flavor.
