Air Fryer Zucchini Fritters

Ingredients

  • 2 small zucchinis grated
  • 1 scallion chopped
  • 1/2 small celery root peeled and grated
  • 1 cup lentil flour
  • 1/2 tsp baking soda
  • 1/2 tsp dried dill
  • 1/2 tsp kala namak optional
  • 1/4 tsp ground black pepper
  • 1 tbsp fresh parsley
  • 1 tbsp nutritional yeast flakes
  • rosemary to taste
  • 1 tsp olive oil

Instructions

  • Place grated zucchini in a colander over the sink. Add 1/2 tsp of table salt and let it sit for about 15 minutes. Drain the zucchini well (you can use a clean dish towel). 
  • Add the other ingredients to the drained zucchini. Mix well to form a dough.  
  • Shape the mixture into 6 patties and arrange them in a parchment-lined Air Fryer cooking basket. 
  • Select 350 degrees F for 12 minutes. At the halfway point, turn the fritters over to promote even cooking.
  • Serve warm fritters with plant-based mayonnaise or your favorite sauce for dipping. Some good options include hot sauce and tzatziki.
