Pizza Muffins

- 3/4 cup flour
- 1 tsp baking powder
- 1/4 tsp garlic salt'
- 1 tsp italian seasoning
- 3/4 cup milk I used 1%
- 1 egg
- 1 Tbsp finely grated parmesan cheese
- 1/3 cup reduced fat shredded mozzarella
- 1/4 cup shredded asiago cheese
- 3 slices cooked low point bacon Oscar Mayer center cut
- 20 small slices pepperoni 56g
Preheat the oven to 375F and spray a mini muffin tin with nonstick cooking spray.
In a small bowl, whisk together the egg and milk. Then in a separate bowl mix the flour, baking powder, garlic, and Italian seasoning together. Add the egg and milk mixture to the dry ingredients and mix well.
Stir in all of the cheeses.
Cut the pepperoni into small pieces and crumble the cooked bacon slices. Mix them both into the batter.
Divide the batter over the 24 mini muffin tin, and sprinkle with more Italian seasoning.
Bake in the oven for 20 minutes.
Carefully remove from the tin using a knife around the edges. Serve warm with some marinara sauce or pizza sauce for dipping.
