Blueberry lemon waffles

Ingredients

  • 1 egg
  • 1/4 cup unsweetened apple sauce
  • 3/4 cup 1% milk
  • 2 Tbsp fresh squeezed lemon juice
  • 1 tsp vanilla
  • 1 Tbsp sugar
  • 1 tsp lemon zest
  • 2 tsp baking powder
  • 1 cup flour
  • 3/4 cup frozen blueberries

Instructions

  • Pre-heat the waffle maker.
  • In a bowl, or a 4-cup measuring cup (for easy pour of the waffle later), whisk the egg for about 3-4 minutes until it’s frothy.
  • Stir in the apple sauce, milk, vanilla extract, and lemon juice.
  • Mix well, then add the all purpose flour, baking powder, and lemon zest. Gently fold in the blueberries.
  • Spray the waffle maker with nonstick cooking spray.
  • Pour ⅓ of the batter into the waffle maker and cook for about 7-9 minutes until the light indicator goes on.
  • Serve warm and enjoy!
