Chocolate Chip Oatmeal Bars

Ingredients

  • 3 eggs
  • ¼ cup brown sugar
  • cup unsweetened apple sauce
  • ¼ cup milk I used 1%
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 ⅓ cup oats quick oats work fine
  • 2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ cup mini chocolate chips

Instructions

  • Preheat the oven to 350F and spray a 9x9 baking dish with some nonstick cooking spray.
  • In a bowl, whisk the eggs with the brown sugar until it’s light and fluffy.
  • Mix in the apple sauce, milk, and vanilla extract.
  • Stir in the all purpose flour, oats, baking powder, and cinnamon. Mix well then fold in the mini chocolate chips.
  • Pour the batter out into the baking dish and bake in the oven for approximately 35-40 minutes.
  • Let the bars cool. Then use a knife to scrape around the edges and remove the squares from the pan. I was able to remove it as a whole and then cut it into 9 equal squares. Enjoy!
