coconut banana muffins

Ingredients

  • 2 eggs
  • 3 Tbsp brown sugar
  • 2 ripe mashed bananas
  • 1/3 cup unsweetned applesauce
  • 1 tsp vanilla
  • 1 cup flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 3 Tbsp unsweetened coconut flakes
  • 4 Tbsp mini chocolate chips

Instructions

  • Preheat the oven to 350F and spray a regular size 12 cup muffin tin with some nonstick cooking spray.
  • In a bowl, whisk the eggs and brown sugar together. Add in the mashed banana, applesauce, and vanilla extract.
  • Stir in the all purpose flour, cocoa powder, and baking powder.
  • Fold in 2.5 Tbsp of chocolate chips (leaving the remaining 1.5 Tbsp for the topping)
  • The batter will be on the thicker side and that is ok. Fill the muffin cups equally with the batter.
  • Sprinkle the coconut on top of the batter and then the remaining chocolate chips
  • Bake in the oven for 22 minutes or until baked right through. Let them cool then remove from the baking tin. Enjoy!
