This recipe comes to you by request of a fellow Weight Watchers member. She loves sweet and salty snacks and requested something easy to make, but tasty. If you also love sweet and salty snacks but want to stay on track with your daily allotment of points, these Weight Watchers No Bake Cookies are the perfect ones to try. 

Not only are these no bake cookies easy to make, they’re made with a combination of healthy ingredients. Quick oats are used to give you a good dose of energizing carbs and fiber. Honey adds sweetness, and you get some healthy fat from the peanut butter. The fun ingredient – pretzels – adds a salty crunch that pairs amazingly with the sugar-free caramel sauce. These are divine!

These Weight Watchers no bake cookies are 2 points each, so you can have a few for an afternoon pick-me-up. They’re easy to take on the go and don’t create a huge mess. 

It’s easy to get creative with this recipe. 

You can make just sweet no bake cookies rather than sweet and salty, or add nuts, or use a different flavor of chocolate chips. It’s all up to you and your preferences! 

Ingredients you need to make Weight Watchers No Bake Cookies: 

  • 1 ⅓ cup Quaker oats, measured dry
  • ⅓ cup crushed pretzels (I used 30g of Rold Gold tiny twist)
  • 1.5 tablespoon mini chocolate chips
  • ¼ cup light or reduced fat peanut butter
  • ¼ cup Smucker’s no sugar added caramel sauce
  • 2 tablespoon honey
  • 1 teaspoon vanilla

How to make Weight Watchers No Bake Cookies (step by step): 

  1. Mix all of the ingredients in a bowl and then refrigerate for 30 minutes. Letting it sit in the fridge will help the batter stick together, and make it easier to roll them into balls. You could also let it sit overnight in the fridge. 
  2. Using about 1 tablespoon of the mix, roll it into a ball. You can lightly wet your hands to help them not stick.
  3. Keep these stored in the fridge.
  4. Makes 22 no bake cookies, but you can make larger ones if you prefer. Just make sure to adjust the points. (44 points divided by however many cookies you make).

Different ways to change up this recipe: 

  • If you don’t like sweet and salty, and just want sweet, that’s an easy fix! Leave out the salty pretzels, and you’ll have caramel chocolate chip no bake cookies to curb your sweet tooth. 
  • The great thing about no-bake cookies is you can play around with the ingredients. You can add in some dried fruit, any kind of chopped nuts, and any kind of chocolate chips. I have made these with white chocolate chips before and they were so good. 
  • Lily’s No Added sugar butterscotch chips would be delicious with the pretzels and caramel. 
  • To make these cookies 1 point each, use PB2 instead of peanut butter. You’ll have to mix the PB2 with water before adding it to the batter. 

Tips and Tricks for Making Weight Watchers No Bake Cookies: 

  • I buy the no sugar added Smucker’s caramel syrup. if you can’t find this brand, any caramel syrup will work in this recipe.
  • Adding a little water to your hands while you are rolling the cookies into balls will help keep the mixture from sticking to your hands. Or you could spray your hands with Pam spray. 
  • The cookies will store well in the fridge for up to 7 days (but you’ll eat them well before that!) 
  • I use Quaker oats but quick oats will work just as well. You can use any kind of nut butter in these. I prefer them with peanut butter but almond butter will also be delicious.

    Made these last week, used maple syrup (the real stuff!) instead of honey….OMG delish!!
    Making them again for family, for Christmas (along with Double Chocolate Peanut Butter Banana cookies)

    1. Hi Denise, you need something “sticky” you could try honey or maple syrup, although I am not sure if that would alter the points, are all nut butters out?
