As a Weight Watchers devotee myself, I was so excited to hear about the launch of the new program and the inclusion of chicken on the zero point list!  It opens up a whole world of possibilities for delicious and healthy meals. We all know chicken is a great lean protein source, but let’s be honest, sometimes the same old recipes can get a little repetitive. That’s why I love finding creative ways to incorporate chicken into my meals to keep things interesting! This prosciutto mozzarella roll is the perfect example.  

They’re incredibly flavorful and satisfying, and let me tell you, they were a runaway success in my household.  The best part?  They come together in no time at all and only clock in at 2 Weight Watchers points each. So, if you’re looking for a quick, easy, and delicious way to enjoy chicken that won’t break the bank on your points budget, you have to try these rolls!

These are a fun, healthy dinner option. 

You don’t have to worry about having bland chicken again and again just because you’re on a diet. These prosciutto mozzarella rolls are just 2 points each, meaning you could have at least 2 for dinner! 

It’s a great meal prep option for work lunches. 

Make a batch of these on a Sunday, and you can have a fun Weight Watcher’s approved lunch ready for throughout the week. I suggest just popping one or two in the air fryer to crisp them back up. 

Prosciutto Mozzarella Rolls are great for entertaining.

Ingredients you need to make Prosciutto Mozzarella Roll: 

  • 3 (6 oz) boneless skinless chicken breast, cut open in two
  • 2 oz prosciutto
  • 3 oz mozzarella cheese
  • ¼ cup diced red pepper
  • ¼ cup diced red onion
  • 1 egg
  • Juice of half a lemon
  • ½ cup breadcrumbs

How to make Prosciutto Mozzarella Roll (step by step): 

  1. Sautee the diced peppers and onions in a frying pan with a little cooking spray for 5 minutes. 
  2. Preheat the oven to 400F, and spray a baking dish with some non-stick cooking spray.
  3. Mix the egg and lemon into a small dish. Spread the breadcrumbs out onto a flat plate.
  4. Cut the 3 chicken breasts open so you have 2 (3 oz pieces). 
  5. Divide the 2 oz of prosciutto into 6 portions, approx 0.3oz in each roll.
  6. Place the prosciutto on top of the chicken, then top with 0.5 oz of mozzarella, and add a spoonful of the pepper and onion mix. I also added a dash of pepper. Roll the chicken up, and use toothpicks to hold it in place if you need to.
  7. Dip the rolled chicken into the egg mix and then roll it in the breadcrumbs. Place it on the baking dish, and repeat with the remaining chicken.
  8. Once all of the chicken is rolled and in the dish, spray the tops with a little cooking spray, and bake in the oven for 25 minutes.
  9. Serve warm and enjoy!

Different ways to change up this recipe: 

  • You can use whatever cheese you like, but mozzarella is definitely a good one to go with. It melts easily and pairs perfectly with the prosciutto. 
  • Add a bit of fresh basil to really liven this up.

  • Prosciutto mozzarella rolls keep well in the fridge for up to seven days. They do not freeze well.

  • 3- 6 oz boneless skinless chicken breast, cut open in two (If your following freestyle you do not need to worry if they weigh more than the 6oz)
  • 2 oz prosciutto
  • 3 oz mozzarella cheese
  • 1/4 cup diced red pepper
  • 1/4 cup diced red onion
  • 1 egg
  • Juice of half a lemon
  • 1/2 cup breadcrumbs

  1. If I’m too lazy to roll these, do you think it would work to dip one side of the chix in the bread crumbs, lay it flat in the pan, and then just top it with the prosciutto, mozz and mix?

      1. Could I just use thin sliced breasts instead of having to try to split a full size breast? I can never get them sliced evenly

  2. Thank you so much for your inspiration and recipes! I made the procuitto chicken following your recipe almost exactly. My rolling skills didn’t work out, so instead I breaded the chicken and topped it with the remaining ingredients (I used roasted red peppers from the jar as I didn’t have fresh).
    It was AMAZING! My family loved it too!

  3. I made this last weekend and it was DELICIOUS. I wonder if subbing the Prosciutto for deli ham might be a bit more cost effective (though not nearly as good). (Only because I want to make this all the time but know I’ll go broke buying prosciutto on the daily! ha! Anyway, thanks for this!

  4. Just made this and I LOVE ITTTTT. I used a mixture of Panko crumbs and Parmesan for the breading and added just a teaspoon of garlic into the pepper/onion mix, because I’m a little extra, haha. This was fantastic though, thanks so much, Kate!
