If you’re in need of a holiday breakfast dish, or even a weekend brunch dish, look no further than this Everything Bagel Casserole. For the last few years, I have been creating sweet dishes for the holidays like my Cinnamon French Toast Bubble Up, but this year I wanted to switch things up and go a little more savory. This Everything Bagel cheesy breakfast bake is EVERYTHING! 

By using Everything But The Bagel seasoning, the flavor in this dish packs a punch. The two-ingredient dough used to make the bagels keeps the Weight Watchers points low, so it’s packed with flavor without a ton of points. Even though it does require a bit of prep work (you need to make the bagels ideally the day before so they are not too fresh and soft), the flavor is worth it. It will please all breakfast and brunch lovers!

Eggs add a good bit of protein to this dish which will help you sustain your energy until lunch. No mid-morning energy crashes after a breakfast like this! 

You can make two recipes in one. 

Since you’re already making two ingredient bagels for the casserole, make a few extra so you can have some on hand. Cook once, eat twice is a motto to stick to when you want to keep meal prep easy. 

It’s easy to switch up the flavors.

Don’t like Everything But The Bagel seasoning? That’s okay – just swap it for a seasoning you do like! You’ll still end up with a cheesy, healthy breakfast bake. 

Ingredients you need to make Everything Bagel Casserole: 

  • 1 cup self-rising flour
  • 1 cup nonfat plain Greek yogurt
  • Everything But The Bagel seasoning (I use Trader Joe’s brand but any brand will work just as well).
  • 6 wedges Laughing Cow herb and garlic cheese
  • 6 slices cooked and crumbled Oscar Mayer center cut bacon
  • 1 ½  cups milk (I used unsweetened cashew milk but any milk can be substituted – just check the points!) 
  • 6 eggs
  • Dash salt and pepper
  • ⅔ cup reduced-fat shredded cheese (I used a 3-cheese blend)

How to make Everything Bagel Casserole (step by step): 

  1. First, you need to make the two-ingredient dough bagels. Preheat the oven to 375F. Line a baking sheet with parchment paper and lightly spray with nonstick cooking spray. 
  2. In a bowl, mix together the flour and yogurt until you have a dough-like texture. Add a little extra flour if the dough is too sticky.
  3. Divide the 2ID into 6 equal portions, then roll out into logs and pull the ends together to form a bagel shape. Repeat with all dough pieces. Brush the tops with a little egg wash and sprinkle each one with Everything But The Bagel seasoning. Bake them in the oven for approximately 30 minutes or until the bagels are golden in color.
  4. When you are ready to build the dish (be sure to have the bacon cooked) spray a 9×13 dish with some nonstick cooking spray. Cut open the 6 bagels, and use 1 laughing cow wedge on each bagel- so half a wedge per half bagel. Scatter the cut bagel pieces evenly over the bottom of the casserole dish.
  5. Sprinkle ⅔ of the crumbled bacon over the top of the bagel pieces and ⅓ cup of shredded cheese.
  6. In a bowl or large measuring cup, whisk the eggs, milk, salt, and pepper together. Pour this egg mixture over the bagel pieces evenly. Top the casserole with the remaining cheese, bacon, and a dash of the EBTB seasoning. Cover with foil and let sit in the fridge for 1 hour. This gives the bagels a chance to soak up the egg mixture. 
  7. Preheat the oven to 350F. Keep the dish covered with foil and bake it in the oven for 40 minutes. Then remove the foil and bake for another 15 min.
  8. Remove the casserole from the oven and let it cool for 5 minutes before cutting it into 6 equal servings.

Different ways to change up this recipe: 

  • You can use store bought bagels but it will increase the points drastically. 
  • Use your favorite cheeses in this dish! 
  • You could substitute a lean ground turkey for the bacon if you prefer a sausage and egg breakfast over a bacon and egg breakfast. 

Tips and Tricks for Making Everything Bagel Casserole: 

  • I make the bagels the night before so they are not soft and fresh. They work better as day-olds. If you make the bagels the same day, then I would pop them in the toaster for a few minutes to harden them up. You don’t want them toasted so just a few minutes will do.
  • This bake will freeze well or keep in the fridge for up to 7 days. It makes a great meal prep breakfast since it will give you a serving for each weekday. 
  • I know some flavors of Laughing Cow are not available everywhere so if you can’t find the herb and garlic one, any kind will be just as delicious! 
  • You can prep this the night before and leave it in the fridge overnight rather than have it sit in the fridge an hour before baking.

  1. I made this for Christmas morning and everyone loved it! I made the bagels 2 days before, assembled it the night before, and then popped it in the oven as we were opening gifts. Perfect just as written!

  2. I made this for Christmas breakfast that I hosted and it was a huge hit. No one even knew it was ww. I did not make the 2ID but instead bought bagel thins which are only 3 points each. Thank you!

    1. Hi sorry I am not sure what 647 bread is but any bread will work, the bagels are of course a denser type bread so keeping that in mind

  5. I saw this and wanted to make it quick so I hacked it to use what I had on hand. It turned out great!!! I used Dave’s thin sliced white done right bread instead of bagels. Coated 6 slices with some low fat plain cream cheese, swapped for the laughing cows. I sliced each piece of bread up and placed in sprayed dish as directed. I layered in some chopped Hillshire Farm honey ham, instead of bacon. Used 3 low-fat cheese sticks, shredded over top. Followed the rest of directions, though I didn’t let it set once together. I covered with foil and baked as directed. It was great! 6 servings were 6 points each. Will definitely do again. Maybe with my favorite salmon bagel toppings next time.
