These tasty breakfast cups were inspired by my usual breakfast that if you follow me on Instagram  I am sure you see quite often, egg whites, bacon and home fries cooked with peppers & onions.. I probably eat this at least 3 times a week and I figured why not throw them all together and make some easy grab and go egg white cups out of it. The end result was a delicious breakfast cup filled with all my favorites and just 1 smart point each! To see the home fries I use and the nutritional info you can refer to my product review.
Egg white breakfast cups
1PP, 1SP blue, green & purple
Ingredients
- 1.5 cups frozen home fries
- ¾ cup diced green pepper
- ¾ cup diced onion I use red onion
- Dash of salt & pepper
- ½ teaspoon cajun seasoning
- 4 slices low point bacon cooked (I use Wegman's center cut bacon)
- 2 cups liquid egg whites in the carton
Instructions
- In a large frying pan over medium heat cook your home fries using a little cooking spray, add in your diced peppers & onions, salt & pepper and cajun.
- You can cook your bacon at this time in a separate pan, drain, crumble and add to home fries.
- Preheat oven to 375F.
- Once home fries are cooked (about 15 minutes) spray a 12 hole regular muffin pan with some cooking spray, best to spray well.
- Add ¼ cup of home fries mixture to each muffin cup, then pour your egg whites over the mixture until cup is full. Repeat for all 12 cups, you may require a little more than 2 cups of liquid egg whites.
- Bake in oven for approx 20 minutes. Let cool for 5 minutes then carefully remove cups using a knife to scrape around edges.
- Makes 12 cups at 1 PP or 1 smart point each on blue, green & purple (1 points plus) *Please note I did not figure the nutritional info out for these, simple math tells me that because the only ingredients with points is the home fries (8SP) and bacon (4SP) then each cup is 1SP, the egg whites per muffin has a 0SP count, if you have 3 or more at 1 time then I would add 1 point for the egg whites.
- Best stored in fridge, after 2 days I would freeze.
Tried this recipe?Let us know how it was!

How do get your egg whites to not stick in pan? I have tried oil Pam butter all to no avail. Thanks. Love your recipes we use them all the time
Drizzle
Hi Jill, I use a canola oil cooking spray, these did stick a little so I suggest you spray well 🙂 Glad your enjoying the recipes
Sandi
I Have been looking for some new breakfast foods ,this is one I willl try .
I have made many of your recipes and enjoyed them all.

Drizzle
Thanks Sandi.. I hope you enjoy these breakfast cups, so yummy! 🙂
Angela
Have you tried using the paper cupcake liners? I wonder if they would work? I really want to try these!!!
Drizzle
No, I am not sure if they would just stick to those and make a mess, but if you try let me know the outcome please 🙂
Ronnie
They stick to The paper liners so you lose a good portion of your egg
Drizzle
I did not use paper liners as I knew they would stick, I did not reference to use them in the recipe..
Michelle Graham
Oh my gosh this made my tummy rumble! Looks great!
Drizzle
Thanks, I hope you enjoy them!

Is it possible that the measurements for the home fries are incorrect? 1.5 cup of fries divided by 12 is way less than 1/4 cup per tray? Still they were very good though 🙂
Drizzle
Hi there, your forgetting about the peppers/onions, the 1/4 cup in each muffin cup includes them as well 🙂
Marty Smith
can you tell me what home fries you are using?
Drizzle
Hi, see week 1 in my product reviews 🙂
Debbie Semeniuk
I made these today and my family raved about them! There were 2 slight differences. I used McCain's sweet potato fries instead of hashbrowns because I didn't have any. And for some color, I added a pinch of shredded lowfat cheese to each so the points may be up by one. I also used Pam as the cooking spray as they came out of the pan beautifully.
Drizzle
So glad everyone enjoyed them Debbie 🙂
Jacque Raisbeck
I have made these a couple of times now, I love them! I do tend to freeze them after 2 days, then take out and put in fridge for breakfast in the morning! I also changed bacon to turkey bacon as no bacon on hand!
Thanks for the recipes!
Drizzle
Hi Jacque, glad you enjoy the egg cups and good to know they freeze well thank you 🙂
Toni
How would the points change if I used the whole egg, not just the whites? (New to this... thanks!)
Drizzle
Hi Toni, eggs are 2 points each.. so say you wanted to use 6 eggs, you would add 1 point extra to each cup
Christi
On Freestyle, eggs are free so it should be fine with whole eggs, correct?
Drizzle
Absolutely 🙂 I just made the recipe before freestyle so I used egg whites 🙂
Doris
would this work in a cup in the microwave?
Drizzle
Hi, good question, all I can say is give it a go.. as long as your potatoes and veggies/bacon are cooked
Niki
Hello! These look delicious! How long do they stay good in the fridge? And do you just pop them in the microwave in the morning?
Drizzle
Mine usually don't last much more than a day in the fridge just because they get eaten quickly 😉 but a few days should be ok, sometimes the onion will discolor though.. you can freeze them too.. and I like re heating in oven for 5 minutes or toaster oven, not a fan of heating food in the microwave
Mary Ann
I made these and they were delicious! However, I froze them and found them quite dry when I reheated them. Any tips to avoid this?
Drizzle
Hi Mary Ann, I personally have never froze them, they always get eaten in my house 😉 maybe someone else will see them comment who have frozen them and can offer up a tip 🙂
Lisa Guerrero
I didn't have home fries so I used hash browns they turned out good.
Drizzle
home fries and hash browns are basically the same, unless you buy the string style ones, I call them both lol.. Glad you enjoyed them..
Tracy Shillington
Hi,
I just wanted to say that I really appreciate your recipes! I know it must take time to try them all, (and taste them too). Thank you for helping us all out with our WW journey....
Kind regards,
Tracy
Drizzle
Thank you Tracy, I appreciate your kind words and happy to hear your enjoying the recipes, sorry for the late reply I was on holidays.
Bairbre Beakhurst
I love these for a snack between breakfast and lunch. I don't use any home fries or bacon, but include mushrooms and extra of the other veg. So I'm thinking that 2 of these would be free then? Right?
Drizzle
Yes in that case I would think 2 (if using no more than 1/2 cup of liquid egg whites) would be free
Doris
Would using fresh potatoes instead of frozen ones change the point value? If so, by how many points.. TY and they look delish!
Drizzle
I'm not to sure, I would think it would be the same
Charlotte
Hi!
I just found you, and WOW! You and your recipes are going to rock my 2018!
With whole eggs being zero points on Freestyle now, I'm thinking I could make these with whole eggs ~ probably 8 eggs is the equivalent to 2 cups of egg whites?
Do you see any reason i should not use the whole eggs? Since I'm new, I may be missing some nuance here... 🙂
Thank you again for this website. DONUTS~ yay!!!! Can't wait to get cooking!
Drizzle
Hi Charlotte, thanks for your kind words.. I hope you find many recipes here you enjoy... Sure you can use whole eggs, I made them this way 1)because I hate egg yolk lol and 2) to keep points low, I would think 8 eggs would be about 2 cups.. Let me know how they turn out 🙂
Julie
How long do you microwave them from the fridge? From the freezer?
Drizzle
Hi Julie, I personally would heat them up in a toaster or air fryer as I am not a fan of heated food from the microwave, and I'd defrost in the fridge overnight
Schyrel
On the new weight watchers free style, whole eggs are 0 points.
Drizzle
Yes, I am fully aware, and feel free to use whole eggs, I personally choose not to as I am not a fan of the yolk
Kim
I've been test driving omelet muffins the past month and this is by far The Best recipe! It's now my go to for quick breakfasts.
Drizzle
Hi Kim, so glad you enjoyed them 🙂
