Pumpkin spice apple oatmeal muffins

2 freestyle SP, 3SP/2PP
  • 2 eggs
  • 2 Tbsp brown sugar
  • ½ cup canned pure pumpkin
  • ¾ cup 1% milk
  • 1 tsp vanilla
  • 2.5 cups oats
  • 1 tsp baking powder
  • 1.5 tsp pumpkin spice
  • ½ tsp cinnamon
  • ¾ cup diced apple
  1. Preheat oven to 350F and spray a 12 hole muffin tin with some non stick spary.
  2. In a bowl whisk together your eggs and brown sugar. Stir in milk, vanilla and pumpkin.
  3. Mix in your oats, baking powder and spices, fold in your diced apple (peel apple and cut into very small pieces)
  4. Divide batter into your 12 muffin cups and bake for 20 minutes.
  5. Remove from oven and allow to cool for 5 minutes.
  6. Store in fridge or freeze.
