Pumpkin oatmeal chocolate chips cookies

  • 1¾ cup oats (see pic below for the brand I use)
  • ⅓ cup raw pumpkin seeds
  • 1 tsp pumpkin spice
  • 2 Tbsp mini chocolate chips
  • 2 Tbsp unsweetened apple sauce
  • 3 Tbsp sugar free syrup (so pic below for what I used)
  • ⅓ cup pumpkin puree
  • 1 egg
  • 1 egg white
  1. Preheat oven to 350F, line a baking sheet with parchment paper.
  2. In a bowl mix your oats, pumpkin seeds and pumpkin spice.
  3. In a small bowl whisk together your egg and egg white, pour into your oat mixture.
  4. Add in your pumpkin, apple sauce, syrup and chocolate chips and mix well.
  5. Drop by heaping Tbsp onto cookie sheet, using hands shape into cookies, they will not change shape while baking.
  6. Bake for approx 18-20 minutes.
  7. Makes 20 cookies at 2 smart points each (2 points plus) Store in sealed container, after a day best store in fridge, will freeze well.
