Ingredients you need to make Buffalo Chicken Rolls: 

  • 10 egg roll wrappers, usually found in the produce section
  • 2 oz softened light cream cheese
  • 4 oz (1 cup) shredded cooked chicken
  • 2 tablespoons light ranch dressing OR zero point ranch dressing
  • 2 tablespoons Franks hot sauce
  • ¼ cup reduced fat shredded cheese 

How to make Buffalo Chicken Rolls (step by step): 

  1. Preheat the oven to 400F and spray and baking sheet with some nonstick cooking spray.
  2. Mix all of the ingredients together in a bowl.
  3. Scoop by the heaping tablespoon onto the wrappers. Roll and tuck in the sides. Use a little water on your fingers to seal closed.
  4. Spray the sealed wrappers lightly with some cooking spray then bake in the oven for 12-14 minutes until golden brown along the edges. 
  5. Makes 10 rolls. Serve warm and enjoy!

Different ways to change up this recipe: 

  • I normally use my zero point ranch dressing to keep things lightened up, but even with store bought light ranch dressing, these rolls are only two points each. So you could use either! 
  • Feel free to change up the flavor if you don’t like buffalo chicken. BBQ chicken made with G-Hughes Sugar Free BBQ sauce would be good. 
  • Add fresh herbs like thyme or rosemary to really liven up the flavor. 
  • Use shredded turkey breast or extra lean ground beef with some veggies if you want to experiment with different meats. 

Tips and Tricks for Making Buffalo Chicken Rolls: 

  • These don’t keep well, so use them up within a few days. If you do store them in the fridge overnight, crisp them up in an air fryer or oven before serving again. Otherwise, they’ll be soggy. 
  • Buffalo Chicken Rolls do not freeze well. 
  • If you find that they don’t brown well, you can try brushing them with oil or an egg wash rather than just spraying them with cooking spray. 
  • Egg roll wrappers expand, and can hold a good bit, so don’t be afraid to stuff them with the filling.
