I had a request from a follower on my Facebook who was looking for a chocolate zucchini loaf. I will admit, I am not a zucchini fan because...well my relationship with veggies is not very good! 😉 I have been told though that you can't even taste the zucchini and I though ok, I am up for the challenge.. It also gave me a reason for a nice long walk to the local farmer's market to pick up some zucchini. 🙂 Well to my surprise I loved this loaf, it is easy to make and yields 10 generous pieces at 5 smart points each.

Becky
Hi Kate,
I was wondering if you think I could make this into muffins instead of a loaf?
Thanks!!
Drizzle
Hi Becky.. sure I don't see why not 🙂 If you make 10 they will be 3pp each and should be decent sized muffins
Marni
Hi Kate. I made this and subbed 1/3 cup of the flour for cacao powder. It's double chocolate now! Yum. Can't wait to try it. Just came out of the oven and looks great!
Drizzle
That sounds awesome Marni, please let me know how it was 🙂
Margot
Is there something I could use instead of light margarine? I just don't want to buy it only for this recipe.
Drizzle
you can use butter, it will increase the points of the whole recipe but likely not each serving.
Teresa
Just curious why you peel the zucchini, do you prefer it that way. I habe always grated my zucchini for bread peel and all.
Drizzle
Hi Teresa, no particular reason, just prefer it, if you like it unpeeled I am sure it will be fine 🙂
Kristine
This loaf is the best! If you’re wondering if you should make it...the answer is YES!
It’s best warmed up a little.
Drizzle
Thank you so much for the feedback Kristine, so glad you enjoy it 🙂
Susie
I made muffins with this recipe (I needed the portion control) and they were delicious! I love your recipes!!
Drizzle
Hi Susie, glad you enjoy them, I recently made a new zucchini chocolate chip muffin recipe you might want to check out 🙂
Janelle
Thank you so much for being amazing. Today I really wanted my mother in laws raisin coconut zucchini bread so I went to your website to see if I could adjust one of your to make it work and this recipe was perfect. The same idea just switched the chocolate chips with raisins and coconut. Thanks again. You rock!!!!
Drizzle
Hi Janelle, um that sounds amazing adding the raisins and coconut I will have to try it 🙂 thank you so much for your kind words!
Karen
Can it be made with whole wheat flour?
Drizzle
Hi Karen, I never bake with whole wheat flour so I can't give you an honest answer but I don't see why not
Corey
Hi! Do you think this would be ok without the chocolate chips%? Thanks!
Drizzle
Hi Corey, yes you can omit the chocolate chips if you wish
Kara
This recipe looks delicious, I can't wait to try it out!
For anyone doing freestyle, I put it in the recipe builder and it's saying it's only 4pts per serving (I'm guessing the old smart points included the eggs?). Figured I'd share this pleasant surprise!
Drizzle
Thanks Kara, I'll have to go back and recalculate, a few recipes slipped past me 😉
SandyP.
OH I am so glad you tried this in the new freestyle points app, Kara! I am definitely making this now but will be using real butter. Zucchinis are coming in fast now that it is July!
Drizzle
I hope you enjoy the loaf 🙂
Ana
Looks like a delish way to use my leftover zucchini! Do u squeeze the moisture out of it first? (I plan to leave the peel on for the fiber).
Drizzle
Hi Ana, yes always a good idea to squeeze the water out of it 🙂 Hope you enjoy
