This chicken & bacon alfredo pasta bake is creamy and delicious..I was able to bulk it up with extra chicken since it is now a zero point food. It's an easy dish to whip up that I am sure the family will love. Serves 6 at 6 smart points each on the freestyle program.
Chicken & bacon alfredo pasta bake
4-7PP, 6SP blue, 7SP green, 4SP purple
Ingredients
- 2 cups uncooked 100% whole wheat high fiber pasta (see picture below for the kind I use)
- 10 oz cooked shredded chicken breast
- 1 cup reduced fat alredo sauce
- ¼ cup light ranch dressing
- ¼ cup almond milk
- â…” cups light shredded mozzarella cheese
- 4 slices Oscar Mayer center cut bacon cooked and crumbled (as an alternative you can use bacon crumbs or turkey bacon)
Instructions
- Boil your pasta on the stove.
- Preheat oven to 350F, spray a 9x13 casserole dish.
- In a large bowl mix your pasta, cooked chicken, alfredo sauce, ranch and milk together.
- *Optional, feel free to add in vegetables, I just choose not to. It will not increase the point values
- Pour out into your casserole dish and top with cheese and then your bacon.
- Bake in the oven for 20 minutes. Cut into 6 servings..

I made this a few nights ago and it was AMAZING! What's not to love about pasta and cream sauce? I left the bacon off since we didn't have any and substituted skim milk for the almond milk. I didn't have quite enough chicken for the 10oz, but it was delicious all the same. The 9x13 pan was far too big for the recipe, but this could have been due to not including the amount of chicken the recipe called for. Next time, I will make this in a 8x8 or 9x9 square pan. Other than that, LOVED IT and will definitely make again!

This looks so awesome - can't wait to try it! I'm curious about the brand of pasta and sauce you mention above. I've never seen it in any stores; is it available stateside; is the nutritional value better or does it just taste better?

Hi Susan, I am in Canada and these are Canadian products, that said I am sure you can find a whole wheat high fiber type pasta near you as well as a lightened up alfredo sauce. I use these to keep the points down, to me they taste just like regular pasta and sauces..

Hi, sure.. the ranch adds a nice little taste but it's fine to omit if that's your preference

This may be a stupid question, but about how big/much was one serving of this? 1/2 cup? A cup?

Hi Angela, it's not a stupid questions at all! I make all my pasta bakes in a 9x13 dish and cut into equal servings, I don't really measure but I'd say at least 1 cup, just cut 6 equal servings based of your dish used and then points will be as to serving

Hi Sarah, yikes, I am not sure.. possibly a different brand bacon or pasta, plus the pasta sauce I use is a reduced fat, was yours? Products can vary depending where you live.. So I am not sure what brands you used, and did you make sure you entered the servings correctly??
