Calling all breakfast lovers, especially those with a sweet tooth!  Today, I’m taking a break from my usual quick and easy Kodiak mix and venturing into the world of homemade waffles. These blueberry lemon waffles were surprisingly simple to whip up, and the flavor combination is absolutely divine!  The tartness of the lemon perfectly complements the sweetness of the blueberries, creating a truly delightful breakfast experience. 

While I opted for the waffle form this time, I have a strong feeling these beauties would translate just as well into fluffy pancakes.  However, I wasn’t able to determine the exact yield for pancakes, so that’s an experiment for another day!  Despite the mystery pancake count, one thing’s for sure: these waffles are incredibly filling. The best part? They only clock in at 7 Weight Watchers points, making them a guilt-free indulgence.  And to ensure future waffle enjoyment, I’ve cleverly stashed the remaining two in the freezer for another day. So, if you’re looking for a delicious and healthy way to start your day, look no further than these easy-to-make blueberry lemon waffles!

You don’t need a ton of syrup! 

These waffles are sweetened with just a bit of sugar, and the blueberries add sweetness as well. No need to douse these in calorie heavy syrup. They’re delicious on their own. 

Ingredients you need to make Blueberry Lemon Waffles: 

  • 1 egg
  • ¼ cup unsweetened apple sauce
  • ¾ cup low fat milk
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon sugar
  • 1 teaspoon lemon zest
  • 2 teaspoons baking powder
  • 1 cup all purpose flour
  • ¾ cup frozen blueberries

How to make Blueberry Lemon Waffles (step by step): 

  1. Pre-heat the waffle maker.
  2. In a bowl, or a 4-cup measuring cup (for easy pour of the waffle later), whisk the egg for about 3-4 minutes until it’s frothy.
  3. Stir in the apple sauce, milk, vanilla extract, and lemon juice.
  4. Mix well, then add the all purpose flour, baking powder, and lemon zest. Gently fold in the blueberries.
  5. Spray the waffle maker with nonstick cooking spray. 
  6. Pour ⅓ of the batter into the waffle maker and cook for about 7-9 minutes until the light indicator goes on.
  7. Serve warm and enjoy!

Different ways to change up this recipe: 

  • If you don’t want to use syrup, I suggest microwaving some frozen blueberries until they’re fully warm. This will release some of the juice, and you can just pour it right over the waffle! 

Tips and Tricks for Making Blueberry Lemon Waffles: 

  • I always coat my waffle maker very well to prevent sticking. 
  • If you want to store these, I suggest keeping them in the freezer rather than the fridge. They’re easy to crisp back up from frozen if using an air fryer or oven. Keeping them in the fridge will just make them soggy.

    1. Hi Lindy, you realize this recipe makes 3 waffles right?? Maybe double check before commenting on all my recipes that I have done something wrong, I can assure you I check everything.. and in my WW App 1 cup of flour is 13SP

  4. These look wonderful! I thought I had seen some pancake recipes on your sight that are made using Kodiak Cakes mix, but I don’t see them?

    1. I have some muffin recipes using kodiak cakes but no pancake recipes, I usually just use the mix and water for my pancakes and then add fruit 🙂

  5. What are your thoughts on using almond flour? I’m new to WW but have heard almond flour is healthier but not sure if it would be a good substitute.

    1. Hi Nat, AF is tricky to bake with and I really don’t have a lot of experience, it is also higher in points, 18 for 1 cup compared to 13 for 1 cup of all purpose ,, you can search some low carb blogs as they would use almond flour and might have some tips/tricks to baking with it 🙂
