Ingredients you need to make Blueberry Cake Donuts:Â
- ½ cup all purpose flour
- 3 tablespoons white cake mix
- 1 teaspoon baking powder
- 1 tablespoon sugar
- 2 tablespoons liquid egg whites
- 1 teaspoon vanilla extract
- ¼ teaspoon lemon zest

How to make Blueberry Cake Donuts (step by step):Â
- Preheat the oven to 350F, and spray a donut pan, then set aside.
- Mix all of the dry ingredients together in a bowl.
- Add in the liquid egg whites, vanilla, and milk. Very gently fold in your blueberries.
- Bake in the oven for 10-12 minutes. Let them cool and enjoy!Â

- If you use the frozen blueberries, they’re typically smaller so it’s a good idea. Just let them thaw and drain before adding them to the batter because you don’t want extra liquid in the batter.Â
- Try chocolate chips instead of blueberries if you have the points!Â
- If you want more of a fluffy texture, whip the egg whites until they’re pretty stiff before adding them to the batter. This will help give them more lift.Â

Hi Kate! I saw this recipe on your Instagram and I couldn't believe they're just 3pp per 2 of them! They look delicious. 🙂
I just had two questions... Since I'm from The Netherlands, we don't have the same brands/ingredients as in the US. So I tried to Google the "2 Tbsp just egg whites" and learned that "just egg whites" is a brand of dried egg white powder, right? Or do you mean 2 Tbsp of egg whites, fresh from the egg? Because at the instructions you first say "Mix all of your dry ingredients together in a bowl." and after that "Add in your egg whites". So, if "just egg whites" are the dried egg white powder, shouldn't I mix it with the other ingredients? Or do I add fresh egg white after the dry ingredients?
Second questions: I don't have a donut pan, can I use this dough also for cupcakes?

Hi there, just egg whites is like an egg beaters, we have cartons here in Canada and they are called just egg whites, its liquid egg whites, you can use the egg whites from an egg but I find that a lot of work 😉 also you could probably use a muffin tin, maybe a mini one would work best.. Thx for your quick reply! So no dried egg white powder, but liquid egg white in a carton! I just Googled and we do have that in The Netherlands. Just not in the regular supermarkets, but I'll find it. I agree, separating egg whites and yolk is horrible, so egg whites in a carton is a great "invention"! However, must not confuse this carton with the milk carton in the morning.... 😮

So yummy. I did not have white cake mix, I did have a box of Pineapple Upside down cake mix and used that as well as some orange zest because I didn't have lemon zest. It turned out really good.

No it's just low on points or no points depending how much the recipe calls for, you can use reg milk that is fine 🙂

Just bought that pan so have been looking for recipes and found your site. Yum, so is it regular flour or kodiak pancake mix? Cause the others or that mix, I have it. Or can I use it in place of flour. I don't think I have flour lol.

Oh wow that must be a big donut pan, min is a 6 hole Wilton pan, they are standard I think, unless you just made your super big 😉 Glad you both enjoyed them!

I just seen this & was wondering, if I kept this as a base & then subbed the white cake mix for chocolate, no blueberries would it still work?
Also is there a reason for just adding 3 tbsp cake mix? I know it's high in points so maybe that's why??

Good evening. I just made the strawberry lemon donuts. They used flour, sugar, baking powder, Skim milk, and egg. This recipe calls for almond milk, and cake mix. The recipe you used for strawberry lemon donuts is our favorite. You think I could just put the blueberries in that batter instead of trying this recipe?
