Blueberries were on sale this week, so I might of stocked up a little 😉 Hadn't made a muffin in awhile so I thought... well there you have it... blueberry muffins it is.. But I didn't want just plain blueberry muffins, so these delicious blueberry cake cinnamon sugar muffins were born 🙂 And O.M.G ... I ate 2 right away... no shame.. there only 3 smart points each... so yup I ate 2 of those suckers and I'm okay with that! 🙂
Blueberry cake cinnamon sugar muffins
3PP, 3SP blue, green & purple
Ingredients
- 1 ¼ cup flour
- â…“ cup white cake mix I used Duncan Hines
- 2 tablespoon sugar
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 egg
- 1 egg white 2 Tbsp
- 1 teaspoon vanilla extract
- ¼ cup unsweetened apple sauce
- â…” cup almond milk I use unsweetened original
- ¾ cup fresh blueberries
- Topping- ½ tablespoon sugar & ½ teaspoon cinnamon
Instructions
- Preheat oven to 375F (190C) spray a 12 hole regular sized muffin pan and set aside.
- In a large bowl mix together all your dry ingredients.
- In a small bowl whisk together your egg and egg white, add apple sauce, vanilla and milk, stir well.
- Pour your wet ingredients into your dry and mix well.
- Very gently fold in your blueberries, then fill your 12 muffin cups equally with the batter, try not to have too many blueberries in each muffin or you'll end up with a big mess of a muffin 😉
- In a small bag mix your ½T sugar and ½t cinnamon, sprinkle over your 12 muffins.
- Bake in oven for 20 minutes.
- Makes 12 regular sized muffins at 3 personal points or 3sp on all 3 MyWW programs or 2 points plus each, Best stored in the fridge and they can freeze well too.

It is possible to replace the white cake mix with something else? I live in The Netherlands and I've never heard of it, so I'm afraid I can't buy it here. However I would like to try these muffins because they look pretty good! And 3 smartpoints for each one is great... 🙂

Hi, you don't have any kind of boxed cake mixes? I guess you could add extra flour but it will make the taste slightly different, in these you can taste the cake like texture..

I made them and they are delicious! Love the taste and they're sweet enough for me 🙂 However, I made a mistake to put the mixture into cupcake liners and this didn't work out very well... Very sticky to the liners, so next time I'll just spray the cupcake tray and hope they come out unharmed! 😉

When I put this recipe into my Weight Watchers recipe builder it says the muffins are 2sp not 3, do you know why it may be different?

Hi Sarah, I don't use the recipe builder on WW, I find the products are to generic and they can vary by country or such.. I use My Fitness Pal..By all means use what WW App says if thats what you prefer.. I match my ingredients to a T on MFP but I can't always do that on the WW App..

Could be that now on SP for Weight Watchers the fruit in a recipe does not count, it did on the old Points Plus program.

I made these this afternoon. They look delicious, but my batch only made 11. Do you think they would still calculate to 3 sp? I am not sure how to figure it out in the recipe builder on the WW site as the Cake Mix is listed in ounces. Not sure if 1/3 cup equals an ounce.

Hi Patti, I changed my recipe in myfitnesspal to 11 muffins to get the nutritional info and then entered in WW calculator and still got 3SP so all good 🙂

Hi Sharon, I use MFP to build the recipe and get the nutritional info as you can't do that on the WW App, you can create the recipe but it only gives you a point value not the calories etc and I need that for those that might be counting calories, I use 3 methods to determine my points, MFP, WW App and simple math on paper per ingredient
