If you’re looking for a banana bread recipe, but not just any banana bread recipe, check out this S’mores Banana Bread. It’s decadent, rich, and only 135 calories per slice. It’s made with the typical ingredients like bananas, eggs, a bit of sugar, and all purpose flour. But this loaf has crushed graham crackers, marshmallow fluff, and Lindt dark chocolate added so the result is a super chocolaty, delicious snack loaf. 

Despite the fact that it’s rich and sweet, it only has 10 grams of sugar per slice. A typical slice of banana bread from a bakery or coffee shop like Starbucks will run you about 30 grams of sugar per slice! So you’re saving at least two-thirds by making this healthy recipe instead. Not only that, each slice has three grams of fiber, which helps stabilize blood sugar levels. You could have a banana for fiber, or you could have a slice of this Smore’s banana bread instead. Ingredients you need to make S’mores Banana Bread: 

  • 1 egg
  • 2 tablespoon egg whites (I use simply egg whites from the carton)
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract 
  • ¼ cup unsweetened apple sauce
  • 3 medium mashed bananas
  • 1 cup all purpose flour
  • ⅓ cup unsweetened cocoa powder
  • 26 grams crushed graham crackers
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon mini chocolate chips
  • ¼ cup marshmallow fluff
  • 1 square (10g) Lindt 70% dark chocolate, melted

How to make S’mores Banana Bread (step by step): 

  1. Preheat the oven to 350F, and spray a regular size loaf pan with some nonstick cooking spray.
  2. In a bowl, whisk together the egg, egg whites, and brown sugar and mix well.
  3. Mix in the mashed banana, apple sauce, and vanilla extract.
  4. Next, stir in the all purpose flour, cocoa powder, baking powder, baking soda, and crushed graham crumbs. Leave 1 tablespoon of crushed graham crackers aside for topping. 
  5. Mix well then fold in the chocolate chips. Pour the batter out into the loaf pan.
  6. Bake the loaf in the oven for 45 minutes.
  7. Let it cool for 30 minutes then remove the loaf from the tin.
  8. Melt the marshmallow fluff in the microwave for approx 30 seconds – it will rise some. Spread it quickly over the loaf, then melt the chocolate in a small dish in 35 second intervals, stirring each time until the chocolate is fully melted. Drizzle the chocolate over the loaf then sprinkle the remaining graham cracker crumbs over the top. 
  9. Cut the loaf into 10 equal pieces. Enjoy!

Tips and Tricks for Making S’mores Banana Bread: 

  • I suggest weighing 26 grams of graham crackers out and then crushing them. I crush mine the old-fashioned way- in a small zip lock then smashed with a heavy glass.
  • Keep any leftover slices in the fridge for up to seven days. Alternatively, you can freeze the loaf or the slices if you prefer. It will keep for up to three months in the freezer. 
  • Pop a slice in the air fryer or microwave for 20-30 seconds to reheat it thoroughly. Add a bit of spray butter, and you’re good to go!

    Hello,

    Have you ever considered switching your flour to spelt, or something healthier? If so, do you know how that affects SP?

    1. Hi Natasha, no sorry I have not, I am not interested in using spelt as I really don’t like it 🙁 My recipes are pretty WW friendly as is by using reg flour, I can’t tell you how it would affect the points using it, maybe you can check the WW app??
