Another bacon cheeseburger meal… but let’s face it, what’s not to love about bacon cheeseburgers!! 😉 These crispy crunchy and delicious cupcakes are easy to make and a great family meal everyone can enjoy. At only 3 smart points each they are definitely weight watcher approved. 🙂

Bacon cheeseburger cupcakes

Ingredients 

  • 3/4 lb cooked extra lean ground beef
  • 4 slices cooked low point bacon, crumbled
  • 3 Tbsp ketchup
  • 3 Tbsp mustard, I used a honey dijon
  • 1/4 cup bread crumbs
  • 1/2 cup diced onion
  • 2/3 cup light shredded cheese
  • 24 wonton wrappers or 9 egg roll wrappers, I used egg roll wrappers as I didn't have wontons

Instructions 

  • Cook both your ground beef and bacon separately on the stove top, drain fat. Crumble your bacon.
  • Preheat oven to 350F, spray a 12 hole muffin tin.
  • Press 1 wonton into your muffin cups, if using egg roll wrappers cut each wrapper into 4 pieces, press down 2 pieces into your muffin cups overlapping each other.
  • In a bowl mix your cooked ground beef, cheese (leaving just a little aside to sprinkle on top), ketchup, mustard, bread crumbs, 1/2 of your bacon and onion, mix well.
  • Spoon mixture on top of wonton wrapper, then place another wonton wrapper on top and lightly push down, if using egg roll wrappers just place one of your 4 squares on top and push down. Top with remaining meat mixture, then sprinkle with remaining cheese and bacon.
  • Bake in oven for 15 minutes, let cool for a few minutes and serve. Makes 12 cupcakes at 3sp or 3pp each.

  3. I’d like to make these and have them as leftovers for lunch at work, do you think they will become soggy if I have to microwave?

    1. Hi Megan, they might crisp up better in the oven if that is an option, but I still think they would be ok to re-heat in microwave

  4. This looks so good! Did you serve this with anything else? Also, could corn tortillas work instead of wonton or eggroll wrappers? I don’t have those, but do have the corn tortillas!

    1. I would say give them a go, you never no.. I have personally not tried them so I can’t give you an honest answer.. These are great paired with a salad 🙂

  5. Hi there. I want to make these but I am just wondering if they are three smart points for all colors? I am purple. I do see three smart points but usually you break it down.

    1. Hi Colleen, yes they are 3SP on all programs, if you use ground turkey/chicken you’d be able to lower that on blue & purple, best to build it in the WW app if you do for accurate points
