Ingredients you need to make Apple Cinnamon Muffins:
- 2 eggs
- 2 tablespoon brown sugar
- ¾ cup nonfat plain Greek yogurt
- ⅓ cup unsweetened apple sauce
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 large apple, peeled and diced
- *Optional topping: ½ teaspoon sugar and 1 teaspoon cinnamon
How to make Apple Cinnamon Muffins:
- Preheat oven to 350F and spray a regular-size muffin tin.
- In a bowl whisk together your eggs and sugar, and stir in applesauce, yogurt, and vanilla.
- Mix together the flour, baking powder, cinnamon, and diced apples. Gently fold the dry ingredients into the wet ingredients. Mixing the apples with the flour first will help prevent them from falling to the bottom of the muffins.
- Divide batter into 10 regular muffin cups. Make sure they are sprayed and do not use liners because they will stick. Sprinkle with the optional topping if desired. (Mix together the cinnamon and sugar to create the topping).
- Bake in the oven for 25 minutes. Let cool. Enjoy!

Different ways to change up this recipe:
- Warm two of these up, spray with spray butter and drizzle on some sugar-free syrup, and you’ve got a delicious comforting breakfast.
- You can make a gluten-free version by using a gluten-free flour blend instead. Almond flour would add points and would also create too soft of a muffin.
- Create an “apple pie sundae” by crumbling up one of these muffins and toasting it in the oven until the crumbs are slightly dry. Put the crumbs into a bowl as the base of your sundae. Top with ½ cup Halo Top vanilla bean ice cream and ¼ cup sugar-free apple pie filling.
- You can make this into an Apple Cinnamon Loaf by baking it in a loaf pan. Top the loaf with a drizzle of sugar-free caramel.
- During the spring, peaches would be a fantastic substitute for the apples.
- You can use pumpkin puree instead of the applesauce, or even a mashed banana. Either one will provide the same moisture to the muffins, but with a slightly different flavor and different nutrients. The points will stay the same.
Tips and Tricks for Apple Cinnamon Muffins.
- Store these in the fridge for 2-3 days.
- If you know you’re not going to eat them in 3 days, store some in the freezer.
- Use self-rising flour instead of all-purpose and baking powder for a quicker recipe prep.
- Do not make the batter ahead of time. Baking powder can lose its potency as it sits. So the batter needs to be baked right away.
- Around the holidays, add some nutmeg along with the cinnamon for a classic holiday spice.
- Use raw sugar instead of white sugar for the topping. You’ll get that classic bakery crunch.
- Don’t overmix the batter! Gently fold in the dry ingredients when you’re mixing everything at the end. Once you can barely see that all the flour is mixed in, stop stirring. Continuing to mix it will toughen the batter.

Hi Jennifer, are you using the nutritional numbers in your App because that incl all ingredients even the apples which are 0SP .. the breakdown on my WW app is 13SP flour, 4SP brown sugar, 4SP eggs (green only) and 2SP yogurt (green only) these muffins are denser due to ingredients used however they should not be soggy, it is hard to know what went wrong without being there

Thanks Janice 🙂 so glad you are enjoying them! Yes you can definitely use honey, I'd add in a few extra Tbsp of flour to compensate, and you can even melt a little honey down and drizzle over muffins before you bake them to give them a nice sweet topping 🙂

Made these today, I did not have a large apple, used a medium sized Granny Smith and added two stalks of diced rhubarb. Also, I used a silicone muffin pan. I used raw sugar for the cinnamon topping and divided between the bottom of the muffin pan and the top of the muffins. I like bigger muffins because I will usually each only one instead of two or three of the smaller ones. I got six nice muffins from your recipe and figured each muffin was still only 3 points. and they were delicious! thanks for the recipe!

I just made these for breakfast. These were great. Great flavor and very satisfying. I used ff vanilla Greek yogurt and only one tablespoon of brown sugar. I also cooked them 5 minutes longer so they wouldn't be mushy inside. The only thing I would change is add a pinch of salt. But a great recipe. Thanks for sharing.

HI, most of my muffin recipes will sink a little when removed from the oven and it is due to ingredients used, like swapping out oils & butter for yogurt & applesauce etc.. you could try self-rising flour but they will still likely drop a bit ..so glad you enjoyed them 🙂
