The weekend is approaching and if your anything like me your big plans are snuggling on the couch with your other half, watching a move and having a few glasses of vino (well I drink cider but wine is more recognized 😉 ). So a few glasses in and the munchies attack.. and you just know (because the drinks are speaking not your common sense) that an apple or banana is not going to cut it, and you dont want chips because you know you’ll eat the whole bag!! Nope, you want food! You know… food you would get at the bar if you were out with your friends drinking, those appetizers that make you drool.. that ooey goeey cheesy bread…Mmmmmm bread… 🙂 Well that’s why I came up with these little biscuit muffins.. They are pretty simple to whip up, only a few ingredients needed and filled with cream cheese, a little bacon and surrounded by bread…Mmmmm remember bread. 🙂 They are only 2 points each, so no guilt necessary.. Best served warm right out of the oven!

Garlic cream cheese & bacon biscuit muffins

Ingredients 

  • 1 package of pillsbury biscuits, 7.5 oz pack, from the 4 pack bundle
  • 3 T of light cream cheese
  • 2 T bacon crumble
  • 1/2 t garlic salt

Instructions 

  • Preheat oven to 350F, spray a regular sized muffin pan and set aside.
  • Cut your tea biscuits 4 ways across and 4 ways down, so you have 16 small pieces from each biscuit.
  • Place 10 pieces of each biscuit into the bottom of 10 of the muffin cups.
  • Sprinkle a very small amount of garlic salt onto the pieces. Top with about 1 teaspoon of cream cheese, then about 1/2 teaspoon of bacon crumbs, place the bacon crumbs on top of the cream cheese and push down a little so they stick.
  • Top with remaining pieces, should be 6 for each. Sprinkle again with a little more garlic salt.
  • Bake in oven for approx 10 minutes. Dough will start to turn a golden brown color, 1 biscuit muffin is 2pp..
