French toast breakfast casserole

Breakfast has got to be the best darn meal of the day! Well at least in my world it is, I seriously love breakfast, this coming from someone who never use to eat it.. I won’t get into all the talk about it being so important to eat a good big breakfast, everyone is different, but for me if I start the day with a hearty filling meal it just sets my mood for the day and most of all the rest of my eating.. The morning meal is when I get creative, I love coming up with new ideas and ways to make sure I have a great “on track” day! This french toast casserole is so yummy and I couldn’t believe how filling it was! Makes 6 large servings at 7 smart points each.

Ingredients
  • 1 onion, diced (I used red)
  • 1 green pepper, diced
  • 3 eggs
  • 2 cups liquid egg whites (In the carton)
  • ½ cup 1% milk
  • 10 pieces of low calorie bread, I used Sara Lee 45 calorie multi grain
  • 2 cups frozen hash browns
  • 5 slices low point bacon, cooked and crumbled (I use Oscar Mayer center cut)
  • ½ cup light shredded cheese (I use a 3 cheese blend)
  • Salt & pepper
Instructions
  1. Dice your pepper & onion and cook in a frying pan on stove using a little cooking spray and saute for 10 minutes. You can also cook your bacon at this time. Drain and crumble up.
  2. Preheat oven to 350F, spray a 9x13 casserole dish with a little cooking spray.
  3. Cut your bread into small pieces, layer ½ (5 pieces) on the bottom of the dish.
  4. Sprinkle 1 cup of hash browns over bread, then half of your peppers/onions, ½ of the bacon and ¼ cup of cheese, add a dash of salt & pepper.
  5. In a mixing cup whisk together your eggs, egg whites and milk, pour half of the liquid mixture over your casserole. Repeat layers except for cheese. Cover with foil and bake in oven for 35 minutes, remove foil, add remaining cheese and bake (without foil) for another 15 minutes.
  6. Cut into 6 equal servings, each serving was about 10oz in weight. Each serving is 7 smart points (7 points plus) *Feel free to top with some sugar free syrup. Best stored in fridge, after a few days best to freeze.
