They encompass all the delicious fall flavors, but stay true to their healthy state. The shredded apples are amazing to use when they’re in season. 

Even muffins with caramel don’t have to be high in sugar. 

Rather than have a bakery muffin packed with 40 grams of sugar, enjoy this treat that has just  6 grams of sugar per muffin. You can give these to your kids with no guilt! 

They stay moist all week long due to the apples.

Bake up a couple of batches because these muffins go fast and they are absolutely perfect for breakfast and snacks all week. 

Ingredients you need to make Caramel Apple Muffins: 

  • 1 egg
  • ¼ cup liquid egg whites
  • 2 tablespoons brown sugar
  • ⅓ cup unsweetened apple sauce
  • 2 tablespoons sugar free caramel sauce (Smuckers) 
  • ⅓ cup low fat milk
  • 1 teaspoon vanilla extract 
  • 1.5 cups apples (about 2 apples) shredded, I used a food processer
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1 ⅓ cup all purpose flour

TOPPING

  • Heaping tablespoon of mini chocolate chips
  • 2 tablespoons sugar free caramel sauce

How to make Caramel Apple Muffins (step by step): 

  1. Preheat the oven to 350F, and spray a regular size muffin tin with some non stick cooking spray. Do not use liners, the muffins will probably stick to them.
  2. In a large bowl whisk the egg, egg whites, and brown sugar together. Add in the apple sauce, milk, 2 Tbsp caramel sauce, vanilla extract, and shredded apple, and mix well.
  3. Stir in the dry ingredients – all purpose flour, baking powder, baking soda, and cinnamon.
  4. Divide the batter over the 12 muffin cups.
  5. Place the 2 tablespoons of caramel sauce in a small zip lock bag, cut off the tip, and drizzle it over the muffin batter. Sprinkle on the mini chocolate chips.
  6. Bake them in the oven for approx 22-25 minutes. Enjoy!

  1. What a wonderful recipe! I make many of your muffins etc…as after school snacks for my granddaughters. These are currently in the oven and will be devoured almost as soon as they hit the door!
