This is definitely one of my favorite dinners to make, and its pretty simple as most of my recipes are. I know when we all hear the word pasta we think “oh no, I cant eat that” but you can if you keep it in moderation, meaning don’t go eating pasta everyday and expect to have any points left 😉 This pasta bake is loaded with chicken and cheese and is super filling! Sometimes I add a little aioli sauce if I’m in the mood for a garlicky dinner. Be sure to have cooked shredded chicken on hand, and cook your pasta first. The whole family should like this one 🙂 Serves 6 at 6 freestyle smart points per serving.

Chicken caesar salad pasta bake

6 SP freestyle, 7sp/7pp per serving

Ingredients 

  • 2 cups of cooked penne pasta, I use a Canadian product, PC blue menu high fiber
  • 2 cups of cooked shredded chicken, my favorite way to cook chicken is in the crockpot, just place boneless breast in a little broth and cook on low for 4-6 hours
  • 1/4 cup of chopped red & green peppers
  • 1 cup light grated mozzarella cheese or any light grated cheese
  • 1/2 cup of fat free caesar salad dressing
  • 1/2 cup chicken broth
  • 1/2 cup lightly crushed croutons
  • 1 T finely grated parmesan cheese
  • 2 T bacon crumbs

Instructions 

  • Preheat oven to 350F, spray a 9x13 casserole dish.
  • Mix everything together in a bowl, leaving out the croutons, parmesan cheese and bacon.
  • Place in casserole dish and evenly spread croutons on top followed by parmesan and bacon crumbs.
  • Bake in oven for 15-20 minutes, serves 6 at 6 SP freestyle points, 7 smart points & 7 points plus per serving.

  2. I love a lot of Your recipes but this one is my favourite one so far! I used yellow peppers and added 1/2 a cup instead of a quarter So much flavor ! Yum

  3. I have made and enjoyed a few of your recipes recently. Thanks for sharing. But sometimes, like with this one, when I use the recipe builder, my points don’t come out the same. With this one, even tho I used nuPasta instead of regular pasta and therefore have less points, I still ended up with 7 SP instead of the 6 SP that you got. What am I doing wrong?

    1. Hi Deborah, all I can pin it to is different brands of products, I have to enter what I use.. And if you’re in the U.S and I am in Canda sometimes those might be different brands/point values

      1. It says 2 cups cooked pasta but here you say dry? I have made this recipe numerous times but always done 2 cups cooked pasta

  4. Does the chicken broth just go in the crockpot while cooking the chicken or does it go in the mixture as well?

  5. This is one of our families favourite recipes. We’ve been making it for years now. When my daughter turned vegetarian she just changed the chicken to mushrooms. Have you thought of adapting this into a soup?
