The very first casserole recipe I made when I started this blog was my chicken caesar pasta bake and it remains one of my favorite dishes! I have been telling myself forever or so it seems that I must turn this into the ever popular "bubble up" casserole, the term bubble up is given to these bakes when we use the biscuit dough in them and they bake up into the dish, the end result is a delicious meal the whole family will enjoy. This chicken caesar bubble up is no joke guys, so good and might just be my new favorite bubble up, but I say that every time I make a new one ha! Makes 6 servings at 5 freestyle smart points each.
Chicken caesar bubble up
5 SP blue & purple, 6SP green/6PP per serving
Ingredients
- 7.5 oz pack home style biscuit dough I use Great Value bought at Walmart in the U.S, they come in a 4 value pack and have 10 small biscuits in each roll, if you can not find the right weight then buy the bigger pack and weigh out 7.5oz, I suggest you cut the bigger biscuits in half across then each piece in 8-10 pieces, so that one biscuit will yield you 16-20 pieces.
- 8 oz cooked shredded chicken about 2 cups.
- ¼ cup diced green pepper
- ¼ cup diced red onion
- ½ cup fat free caesar dressing
- ½ cup reduced fat shredded mozzarella cheese
- ¼ cup finely grated parmesan cheese
- 3 tablespoon bacon crumble real bacon bits in the package
- ¼ cup croutons crushed
Instructions
- Preheat oven to 350F, spray a 9x13 casserole dish with some cooking spray.
- Cut your 10 small biscuits into 6 pieces each and spread evenly on bottom of your dish.
- In a bowl mix your shredded chicken, peppers/onion, caesar dressing, mozzarella cheese, 3 tablespoon of parmesan cheese (leave 1 tablespoon aside for topping) and 2 tablespoon bacon bits (leave 1 tablespoon aside)
- Mix well and drop by spoon evenly over your biscuits covering all areas.
- Top with your last 1 tablespoon of parmesan cheese and 1 tablespoon of bacon bits, finish with your crushed croutons.
- Bake in oven for approx 40 minutes.
- Cut into 6 servings, each serving weighs approx 6 oz.

Why kind of Caesar dressing do you use? (And is it the creamy kind or oil based)

Also trying to figure out what kind md of Caesar dressing you use. I could only find one brand that sells fat free Caesar and it was creamy style.

I am in Canada, we have a Kraft fat free dressing, if you can't find then just used a reduced fat kind, I don't think it will alter points too much

Hi, if you are in the U.S you can buy low point bacon such as center cut by Oscar Mayer (at Walmart) or Wegmans center cut.. If your in Canada we son't have many options which is why I say maybe use the real bacon crumble, I usually find these in the salad dressing aisle, the biscuits I buy at Walmart in the U.S they are a great value brand and 7.5oz pack (come in a 4 pack) in Canada you can buy the bigger biscuit dough packs and weigh out 7.5 oz, I suggest cutting your dough into small pieces so you have enough on the bottom of the dish.. Hope that helps

Have you had luck making it The night before you would like to serve it? If so, did you just prep so it was ready to bake the next day or did you bake it the night before and then reheat it? Thank you!

I have not no, but I think either way should be fine, I am not too sure if the dough will expand though over night, something to think about

I made this recipe tonight and its a keeper!! Very filling! I didn't add the green peppers ( husband doesn't like them) but everything else I used. I might have baked it a bit too long but I liked it the way it turned out.

Sorry if this is a stupid question, but you say to use 8 oz of cooked chicken, then say about 2 cups. Is the 2 cups raw chicken because 8 oz is 1 cup. Mine was a little dry, but I used 2 cups of cooked chicken, not 8 oz. Just trying to figure out where I went wrong. Thank you!

Hi Julie, your thinking 8oz water is 1 cup, it is different with chicken, weigh out 2 cups of cooked shredded chicken and you will see it is about 8oz, hope that helps

Hi! I made this with Pillsbury biscuits and Renee’s reduced fat Caesar and when I enter it into my app I’m getting 8 points a serving! Do you think it’s the dressing that’s different!

Hi Natalie, the pillsbury don't do that size anymore so my guess is it's your biscuits, the one I use is a small 7.5 oz tube with 10 small biscuits in it, the whole pack of biscuits is 17SP ..the dressing should not be that different on points
