You all know how much I love buffalo chicken anything. I was craving a buffalo chicken dish, cause let’s be honest when am I not craving it? I wanted to keep this recipe simple and something I could whip up quickly, as I did not have a lot of time to spend in the kitchen. This buffalo chicken roll did not disappoint. They are delicious, filling, and are so easy to make. They took me about 10 minutes to prepare and pop in the oven. Buffalo chicken rolls are pretty spicy, so they’re perfect for any of you who love the heat. However, if you don’t love spicy food, I still recommend trying them and adjusting the heat level to your preference. 

With just six ingredients and about one hour, you can have eight delicious buffalo chicken rolls ready to eat. Two rolls are one serving, and it’s still under 300 calories. It’s an amazing dinner option when you want to keep it light and simple, but need some spice in your life.

It’s so fun to eat these creamy, protein-packed rolls for dinner. It definitely doesn’t feel like you’re on a diet when these are on the menu. They’re hearty and full of flavor. 

Buffalo Chicken Rolls can be altered to fit your spice preference. 

I love Frank’s hot sauce in these rolls, but feel free to just use the ranch if you’d rather have a Chicken Ranch roll! 

They keep well, so it’s an amazing meal prep option. 

Because it makes so many rolls, its a great option to have for leftovers the next day. Just pop them in the air fryer or oven to crisp the coating up a little, and it’s just as good as the day it was made. 

Ingredients you need to make Buffalo Chicken Roll: 

  • 4- 7 oz boneless skinless chicken breast, raw
  • 3 oz softened, light cream cheese
  • 1.5 tablespoons Franks hot sauce
  • 1.5 tablespoons light ranch dressing or zero point ranch dressing
  • ⅓ cup reduced fat shredded 3 cheese blend
  • ⅓ cup bread crumbs
  • Frank’s hot sauce for coating the chicken

How to make Buffalo Chicken Roll (step by step): 

  1. Preheat the oven to 350F and spray a 9×9 dish with some cooking spray.
  2. Cut each chicken breast open in half.
  3. In a bowl, mix the softened cream cheese, ranch, franks hot sauce, and shredded cheese.
  4. Brush the chicken with Frank’s hot sauce and then spread the cheese mixture on, about 1 tablespoon per roll.
  5. Roll up the chicken and dip each roll in bread crumbs making sure you cover all areas. Seal each chicken roll closed with a toothpick. Some cheese mixture may try to come out the ends, but that’s okay. 
  6. Lay the rolls in the dish and bake for 40 minutes.
  7. Makes 8 rolls and serves 4 (2 rolls per serving). Enjoy!

Different ways to change up this recipe: 

  • Use crushed Quest chips or pork rinds rather than breadcrumbs. It still gives a good crunch and can change the flavor in a good way. 
  • You can use any sauce you like – it doesn’t have to be Frank’s hot sauce. G-Hughes Sugar-Free BBQ sauce would be really good. 
  • I like making Zero Point Ranch for a dip. It goes so well with the spice of these buffalo chicken rolls. 

Tips and Tricks for Making Buffalo Chicken Roll: 

  • If it’s too spicy for you, brush the chicken with whisked egg whites rather than hot sauce before applying the cheese mixture. 
  • I suggest adding a dash of salt and pepper to each chicken slice before adding all of the other ingredients so all the flavors are enhanced.

  1. I love this recipe! My rolls don’t look nearly as tidy as yours, but they taste great!! How did you split the 4 chicken breasts into 8? I think I may have done that part wrong… but it all tastes the same right??

    1. Hi Jillian, I cut the chicken breast open, so your left with 2 pieces the same size as the full piece was just thinner, if that makes sense 😉

  3. As a Buffalonian I HAVE to have some blue cheese with my chicken. Do you have any ideas for zero point blue cheese? Wondering if I got a powered blue cheese dressing, haven’t seen in stores but they have some on Amazon.

    1. Hi, I am not too sure to be honest, I am not a fan of blue cheese, are you thinking the powder mix and yogurt? I’d say give it a go 🙂

        1. It is a very close up picture so it might look like more, and when I say about a Tbsp it was more of a heaping one, plus I added to each one after I measured out the Tbsp as there was leftover .. you want to use up all you have
