I am always thinking of creative ways to have a egg-less breakfast, being that I just can’t seem to acquire a taste for eggs! I do love bacon, I mean honestly who doesn’t 😉 and sausages and hash browns…Yum.. So why not throw them all together and make a delicious breakfast cup.. wonton wrappers are great, there’s so many things you can create with them.. These breakfast wonton cups are yummy and only 3 points each.

Breakfast wonton cups

Ingredients 

  • 12 wonton wrappers
  • 1 cup frozen hash browns
  • 1/3 cup diced onion
  • 1/4 cup diced green pepper
  • 1 chicken sausage, I used a spicy al fresco sausage
  • 4 slices bacon, I used Oscar Mayer center cut to keep points low
  • 1/3 cup light shredded cheese
  • 1/2 tsp cajun seasoning
  • Salt & pepper

Instructions 

  • Cook your sausage and bacon in a pan on the stove. In a separate pan cook your hash browns with your onions and peppers, cajun and a dash of salt & pepper.
  • Preheat oven to 350F. Spray a 6 hole regular muffin pan with non stick cooking spray. Use 2 wonton wrappers and over lap them, push down into muffin cup, lightly spray the wonton wrappers.
  • Cut up your cooked sausage into small pieces and crumble up your cooked bacon, add to your hash brown mixture.
  • Use half of your cheese and sprinkle in the bottom of your wonton cups. Divide your hash brown mixture into your 6 cups, top with remaining cheese.
  • Bake in the oven for 10 minutes, serve immediately. Each cup is 3pp.

  1. I have been failing since January. I can’t get through one day. Lost 70. Now gained back 12. Everytime I see the high points, I get upset. I put one app and tried using pp. Put when I went example subway, couldn’t figure points. Please help.davidlp1@juno.com. my email. Thank you, karen

Hi Karen, sorry to hear about your struggles, I know sometimes its hard when we eat out and don’t know the points, you can always go online or ask for their nutritional info at Subway or wherever it is that your eating, then use the calculator on your PP App to get the points, If all else fails you can always come up with a number in your head that your comfortable pointing it out at, I do that sometimes, and will usually go a little high but I figure its better than not tracking it at all.. Just don’t give up, it takes a little work, pre-tracking your days might help maybe, but it’s worth putting in the time to do so 🙂
